Basil, Caramelized Onion, & Goat Cheese Frittata

A baked omelette? A crustless quiche? Our Italian Basil, Caramelized Onion, & Goat Cheese Frittata is lightly creamy, fluffy and easy-to-make in under 25 minutes.

What is the difference between a frittata and a quiche?

Great question! The simple answer is: the crust!

A Quiche is like a pie with a more creamier base, usually thicker in depth, and takes a little more prepping in the kitchen. A frittata is typically a simple whisked egg mixture that is poured over sautéed veggies in a skillet to be baked for the half the time, resulting in a lighter breakfast (yet still satisfying).

Is frittata freezer-friendly?

Yes, you can freeze a cooked frittata! You can either store leftovers in the fridge for up to 4 days or freeze in an air-tight container after wrapping tightly in Saran Wrap to keep it fresh.

Similar to quiche, our cooked Italian Basil, Caramelized Onion, & Goat Cheese Frittata can be prepped ahead of time, making it perfect for Valentine’s Day breakfast-in-bed, weekend brunch, and so on.

Now, it’s time to grab our aprons and begin cooking deliciousness!

Basil, Caramelized Onion, & Goat Cheese Frittata

Servings: 4 to 6 people

Ingredients

  • 1/2 Red Onion, thinly sliced
  • 6 large Eggs
  • 1/4 cup Milk of choice
  • 1/4 cup Goat Cheese, or shredded mozzarella
  • 2 Garlic Cloves, minced
  • 1/4 cup Fresh Basil, chopped
  • 1/4 tsp. Sea Salt
  • 2 tsp. Extra Virgin Olive Oil

Instructions

  • Preheat oven to 400F.
  • Whisk together the eggs, milk, minced garlic, salt, and basil until well-combined. Set aside.
  • Heat up the extra virgin olive oil in a 10 or 12" cast-iron skillet over medium heat. Add in the thinly sliced red onions to cook until translucent, about 4-5 minutes. Turn off the heat.
  • Evenly distribute the goat cheese in bite-size pieces on the skillet. Pour over the egg mixture, then shake the skillet slightly to distribute.
  • Bake for 15 to 20 minutes, or until edges are set. Season to taste with salt and black pepper. Enjoy!
