Chipotle Chicken Avocado Melts (15-Minute Lunch)
Lunches that take less than 15 minutes to make >> These Chipotle Chicken Avo Melts are crunchy, high in protein and fiber, and seriously so satisfying!

Ingredients you’ll need:
- ½ cup Plain Greek Yogurt, or 1/3cup Mayo
- 2 Chipotle Peppers in Adobo Sauce,finely chopped
- Juice of 1 Lemon
- 1 tsp. Garlic Powder
- Salt & Black Pepper, to taste
- 4 slices Avocado Bread by TheAvocado Bread Co.
- 1 cup Rotisserie Chicken, shredded
- 1 Avocado, sliced
- 2 slices Provolone Cheese, orsliced cheese of choice
- 1 cup Baby Spinach, or arugula
- 2 tbsp. Olive Oil, or butter

Wrap the sandwiches tightly in parchment paper, then store in a resealable bag or airtight container for up to 2 days in the fridge.

INGREDIENTS
Servings: 2 sandwiches
- ½ cup Plain Greek Yogurt, or 1/3cup Mayo
- 2 Chipotle Peppers in Adobo Sauce,finely chopped
- Juice of 1 Lemon
- 1 tsp. Garlic Powder
- Salt & Black Pepper, to taste
- 4 slices Avocado Bread by TheAvocado Bread Co.
- 1 cup Rotisserie Chicken, shredded
- 1 Avocado, sliced
- 2 slices Provolone Cheese, orsliced cheese of choice

INSTRUCTIONS
- In a small bowl, combine theyogurt, finely chopped chipotles, lemon juice, and garlic powder. Mix well.Season with salt and black pepper to taste.
- On two slices of the avocadobread, add a generous slather of the chipotle sauce.
- Evenly distribute the shreddedchicken, spinach, sliced cheese, sliced avocado, and then sandwich with the topbread slices.
- Drizzle a skillet over medium heatwith olive oil, then add the sandwiches to cook 2-3 minutes on each side, untilcrisp and golden brown. Enjoy warm!
