Chorizo Croquetas

Step aside chips and salsa… bc these Chorizo Croquetas are the undefeated champion of crunch, spice, and cheesiness! And they can be prepped days in advance, making for an effortless game day finger food.

Ingredients you’ll need:

  • chorizo
  • olive oil
  • yellow onion
  • butter
  • flour
  • salt & black pepper
  • ground nutmeg
  • whole milk
  • queso fresco
  • eggs
  • panko breadcrumbs
  • cotija cheese
  • frying oil, or more olive oil

How to Prep Chorizo Croquetas in Advance?

You can prep these in two ways, depending on how much time you want to spend prior to serving them.

The first method is to prep the croquetas dough 2-3 days in advance, then batter and fry prior to serving.

The second method is to fully cook/prep the chorizo croquetas the day prior, then reheat in the oven at 400F until warmed through and crispy again. I recommend reheating on a baking pan lined with parchment paper, and flipping each over after a few minutes to ensure even baking on all sides.

How to Store & Reheat Chorizo Croquetas?

Store leftover chorizo croquetas in an airtight container in the fridge up to 3-4 days. Reheat in the oven at 400F for 4-5 minutes, or until warmed through and crispy again. You can also reheat in the air fryer at 350F for 6-8 minutes.

Ingredients

  • 1 package Cacique Premium Chorizo
  • 1 tbsp. + 3 tbsp. Olive Oil divided
  • ½ Yellow Onion finely chopped
  • 4 tbsp. Unsalted Butter
  • 1 cup + ½ cup All Purpose Flour divided
  • ½ tsp. EACH: Salt & Black Pepper
  • ¼ tsp Ground Nutmeg
  • 4 cups Whole Milk
  • ½ package Cacique Foods Queso Fresco
  • 3 large Eggs
  • 2 ½ cups Panko Breadcrumbs
  • Frying Oil such as olive oil
  • Cacique Cotija grated, for garnishing

Instructions

  • In a large skillet over medium high heat, add the tablespoon of olive oil. Once hot, add the chorizo and use a wooden spatula to crumble.
  • Add the finely chopped yellow onion to the chorizo and sauté for 6-8 minutes, until fully cooked and browned. Remove with a slotted spoon to a bowl.
  • Add the remaining 3 tablespoon olive oil and butter to the skillet. Once the butter has melted, add the flour to stir until fully absorbed, about 1-2 minutes.
  • Reduce heat to medium. Gradually pour in about 1/3 cup whole milk at a time as you stir, making sure the milk is fully absorbed before adding more.
  • Once the whole milk is incorporated, remove from heat to stir in the salt, black pepper, and ground nutmeg.
  • Add the chorizo mixture and crumble the queso fresco on top of the savory filling. Stir until well combined.
  • Transfer the savory filling to a 9×13” baking pan lined with parchment paper. Place in the freezer for 30-40 minutes or in the fridge for 2 hours to overnight. The filling should be completely cooled and much firmer.
  • In the meantime, set up the battering station using three bowls. Add the flour to the first bowl, the beaten eggs to the second bowl, and the panko breadcrumbs to the third bowl.
  • Use a spoon to gather about 2 tablespoons of the savory filling, then roll between the palm of your hands to create an even log.
  • Dredge each log through the flour, then the beaten eggs, then the breadcrumbs to coat.
  • Bring 2-3” of frying oil in a skillet over medium heat to 375F, or until glistening. Working in small batches, fry the croquetas until deeply golden on all sides, about 5-6 minutes.
  • Remove with a slotted spoon to a paper towel lined plate to drain excess oils.
  • Enjoy warm with freshly crumbled or grated cotija.
