What is tortellini?
Tortellini are a pasta that’s originally from the Italian region of Emilia. Traditionally they are stuffed with a mix of Parmigiano Reggiano cheese, meat, egg and nutmeg. They are then served in a gorgeous broth sauce.
While you can make tortellini from scratch at home, they are widely sold in the fresh / cheese section at most grocery retailers (or frozen too).
Can tortellini soup be made ahead of time?
Yes! This soup can be stored in air tight containers in the fridge up to 2 days. It’s a great cozy meal prep soup that will keep you full throughout the day.

Substitutions:
- Tortellini = Regular Pasta
- 1/2 cup Milk = 1/3 cup Heavy Cream
- Italian Pork Sausage = Italian Chicken Sausage
