Creamy Zucchini Pasta

Ingredients you’ll need:

  • spaghetti pasta
  • zucchini
  • olive oil
  • parmesan
  • lemons
  • salt & black pepper
  • fresh basil & mint
  • garlic

How to Store and Reheat Spaghetti Pasta:

Storing Spaghetti Pasta:
Let the pasta cool completely before storing. Transfer it to an airtight container and refrigerate for up to 4–5 days. If it’s already mixed with sauce, store them together; if plain, toss with a small amount of olive oil to prevent sticking.

Reheating Spaghetti Pasta:
To reheat, add a splash of water or broth and warm it on the stovetop over medium heat, stirring occasionally. Alternatively, microwave it in a covered, microwave-safe dish in 30-second intervals, stirring in between, until heated through. For best texture, avoid overheating to prevent mushiness.

*HOWEVER, this pasta can be served cold like a pasta salad instead of reheating!

Ingredients

  • 16 oz Spaghetti Pasta
  • 2 large Zucchini thinly sliced
  • 2 tbsp. + 1 cup Olive Oil
  • 1 cup Grated Parmesan plus more for garnishing
  • 1 1/2 cups Fresh Basil Leaves
  • 1/4 cup Fresh Mint Leaves
  • Juice of 1 Lemon
  • 2-3 Garlic Cloves
  • Salt & Black Pepper to taste

Instructions

  • Bring a large pot of water to a boil. Add a generous pinch of salt, then the spaghetti to cook until al dente – or according to package directions.
  • In a large saucepan over medium high heat, add the one cup of olive oil. Working in small batches, fry the zucchini for 2-3 minutes, until golden. Remove with a slotted spoon to a bowl.
  • In a high speed blender, combine half of the fried zucchini, basil, mint, grated parmesan, lemon juice, and garlic cloves. Add 1/2 cup pasta water. Blend until smooth. Season with salt and black pepper to taste.
  • Add the zucchini sauce to a large bowl. By this time, the pasta should be cooked. Use kitchen tongs to transfer the pasta directly from the water to the sauce bowl. Toss for 1-2 minutes, until well coated in the zucchini sauce. Add a few tablespoons of pasta water as needed to help loosen the sauce.
  • Serve the zucchini pasta warm with the remaining fried zucchini slices and extra grated parmesan.

    I tweaked this recipe a bit but used the method written and I really loved it. I’m not a fan of zucchini but my co-worker gave me one from her garden. I searched high and low for a recipe and I’m so happy I found this one. This was delicious! I will be making this again. Thank you for sharing!
