Crispy Sweet Potato Stacks with Browned Butter Sage Drizzle
Add a gourmet touch to your holiday table with Crispy Sweet Potato Stacks with Browned Butter Sage Drizzle, an easy yet elegant holiday side dish that’s full of flavor. Layers of thinly sliced sweet potatoes bake to golden perfection, then get topped with nutty browned butter and fragrant sage for an irresistible finish.


Ingredients you’ll need:
- canned tuna (optional)
- sweet potatoes
- unsalted butter
- olive oil
- fresh sage
- fresh thyme
- parmesan
- flaky salt





I highly recommend using a mandoline slicer to get even, thin potato slices. This will help the stacks to bake crispy. Here’s one from Amazon that I love!

Crispy Sweet Potato Stacks with Browned Butter Sage Drizzle
Ingredients
- 2-3 cans Starkist EVOO Tuna Basil Pesto and/or Crushed Red Pepper flavors
- 5 Sweet Potatoes thinly sliced to 1/8”
- 1 stick Unsalted Butter
- ¼ cup Olive Oil
- 1/3 cup Fresh Sage chopped
- 3 tbsp. Fresh Thyme Leaves
- ½ cup Freshly Grated Parmesan or pecorino cheese
- Flaky Salt for serving
Instructions
- Preheat oven to 350F. Grease a muffin tin.
- In a saucepan over medium heat, add the butter to melt. Once melted, add the chopped sage and continue stirring until browned, about 3-5 minutes. It’s done when the butter smells nutty and brown specks form at the bottom. Remove from heat.
- Set aside ¼ cup of the melted butter.
- In a large bowl, combine the thinly sliced sweet potatoes, olive oil, ¾ cup browned butter with chopped sage, thyme leaves, and grated parmesan. Toss until well combined.
- Add 2-3 sweet potato slices to the bottom of each muffin tin, then a small flake of the canned tuna. Use the back of a fork to spread out the tuna evenly flat. Continue layering until ¼” above the muffin tin rim.
- Cover with foil to bake 20 minutes.
- Use a spoon to help flip the sweet potato stacks halfway through baking. You may closer to them getting crispy to flip. This will prevent the bottoms from getting crispier than the tops.
- Remove foil to bake 20-30 minutes, rotating the pan halfway through, until brown on top.
- Drizzle the remaining browned butter over each sweet potato stack before garnishing with flaky salt and extra fresh thyme. Best enjoyed warm!
