Fudgy S’mores Brownies

How to Store Brownies:
To store brownies and keep them fresh, use an airtight container to prevent them from drying out. For counter storage, they should last 3-5 days.
If storing in the refrigerator, an airtight container will also prevent them from absorbing fridge odors. For longer storage, wrap them tightly in plastic wrap and then foil before placing them in a freezer-safe container or freezer bag to prevent freezer burn
Fudgy S’mores Brownies
Ingredients
- 6 Graham Crackers
- 8 tbsp Unsalted Butter
- 1 cup Semisweet Chocolate Chips
- 1/2 cup Light Brown Sugar
- 1/2 cup Granulated Cane Sugar
- 2 large Eggs
- 1 Egg Yolk
- 2 tsp. Vanilla Extract
- 2/3 cup All Purpose Flour
- 1/3 cup Cocoa Powder
- Optional 1 tsp. Espresso Powder
- 1/4 tsp. Fine Sea Salt
- 1/8 tsp. Baking Soda
- 1/2 cup Chopped Milk Chocolate
- 12-14 large Marshmallows
Instructions
- Preheat oven to 350F. Butter and line with parchment paper a 8×8″ baking pan.
- Add a single layer of the graham crackers to the prepared baking pan.
- Fill a saucepan with 2″ of water. Place over medium heat and bring to a boil.
- In a large bowl, combine the butter and chocolate chips. Place the bowl over the saucepan and stir with a spatula until fully melted.
- Remove the bowl from the heat and vigorously whisk in the sugars, eggs, yolk, and vanilla for 1 minute.
- In a separate bowl, combine the flour, cocoa powder, (optional) espresso powder, salt, and baking soda. Mix well.
- Add the flour mixture and chopped chocolate to the butter mixture. Fold all together with a spatula.
- Transfer the brownie batter to the prepared pan.
- Bake for 25 minutes.
- Remove from the oven to top with the marshmallows. Add back to the oven to cook an additional 5-10 minutes. If not browned on top, broil for 30 seconds to 1 minute.
- Let cool in the pan 1-2 hours before slicing.
