However, from the variety of savory to sweet options, it always seems to be narrowed down to something that is easy and simple to make. This (Gluten-Free) Breakfast Apple Crisp Bake is 10 minutes (or LESS) of hands-on work, then you pop it in the oven to make your kitchen smell like Heaven and bake while you complete your morning routine.

If you meal prep breakfast, then this recipe would be perfect for you, as well! The flavors become even more pronounced overnight.

I HIGHLY highly recommend serving the breakfast bake with a scoop of vanilla yogurt, as well as a drizzle of maple syrup or honey.

If you have leftovers and are craving a quick dessert tonight, then pop this delicious guy in the oven at 400F for 8-10 minutes (until warm) and serve with a scoop of vanilla bean ice cream! MMHMMMM

The baking time will depend on how thick you slice your apples. Whether you like your apple slices thick or thin, I do recommend chopping them into bite-sized pieces. That way you can eat your breakfast bake with just a fork, and you’re not having to cut the large apple slices with a knife… more kid-friendly!

Growing up, my mom would always make breakfast bakes like these for school mornings. She simply would quickly put together the bake while she had her morning cup of coffee, then allow it to bake while she got started on her work for the day. By the time my brother and I woke up, the breakfast bake was perfectly warm and crisp… sending us to school with energy, nutrition, and satisfied hearts.

(Gluten-Free) Breakfast Apple Crisp Bake

For the Filling:

  • 5-6 Apples (Mix of Granny Smith & Honeycrisp), sliced
  • 1/4 cup Maple Syrup or Honey
  • 1 tsp. Ground Cinnamon
  • 1 tsp. Vanilla Extract
  • Zest of 1 Lemon
  • 2 tbsp Water

For the Crumble:

  • 1/2 cup Rolled Oats
  • 1/2 cup Almonds, crushed/chopped
  • 1/2 cup Dates, pitted (about 3-4)
  • 1/3 cup Almond Butter


For the Filling:

  • Preheat oven to 350F.
  • In a large bowl, toss together all ingredients (except the water) and place in a baking dish. Evenly pour the water over the ingredients, then cover the baking dish with aluminun foil. Bake for 25 minutes.

For the Crumble:

  • In a blender, pulse the pitted dates and almonds together 3-4 times. Then, transfer to a small bowl and add in the almond butter and rolled oats. Mix together using your fingers or a spoon, until evenly incorporated.
  • Take the breakfast bake out of the oven, remove the aluminun foil, and place small bite-sized portions of the crumble on top of the bake. Once you have placed your desired amount of crumble, bake uncovered for an additional 25 minutes.
  • Serve warm with yogurt, as well as a drizzle of maple syrup.
