A Gluten-Free Cauliflower Pizza Crust that uses only 3 ingredients, only using 1 bowl, and bakes in under 30 minutes… hallelujah!

This Gluten-Free Cauliflower Pizza Crust proved all my worries to be wrong… because it is indeed crispy on the edges, perfectly flexible on the inside (so that it won’t break apart on you in mid-eating), and works great with any savory toppings! Therefore, I would like to introduce to you the best gluten-free pizza crust you’ve ever tried 😉

Now don’t get me wrong, I still love hand making my own traditional pizza crust… which you can find the recipe for in my cookbook… but this comes pretty close in the running!

Basically there are 6 basic, SUPER easy steps involved:

  1. Rice the cauliflower in the blender.
  2. Cook in microwave on HIGH for 4-5 minutes, or until tender.
  3. Drain the as much water out of the cauliflower as possible, with a tea towel.
  4. Stir in the eggs and extra virgin olive oil.
  5. Bake and top and bake.
  6. Eat!

You can also add some excitement to the Gluten-Free Cauliflower Pizza Crust by adding in ~1/4 cup parmesan or mozzarella cheese, sea salt, black pepper, and dried herbs…

Pictured on the Gluten-Free Cauliflower Pizza Crust is burrata cheese, high-quality Italian salami, thinly-sliced red onions, shaved Brussel sprouts, and a dash of black pepper. Pretty simple yet tastes divine! After baking the pizza crust until golden brown, I add my toppings, and the bake and/or broil for an additional 5 minutes.

Well now that I am officially hungry again… Let’s grab our aprons and start cooking!

Gluten-Free Cauliflower Pizza Crust

Ingredients

  • 1 head of Cauliflower *
  • 2 Eggs
  • 3-4 tbsp. Extra Virgin Olive Oil

Instructions

  • Preheat oven to 450F.
  • In a high-speed blender, pulse the freshly washed cauliflower head (with stems cut off) until rice-sized pieces are created. 
  • Place in a microwave-safe bowl and cover with a tea towel. Microwave on high speed for 4-5 minutes, or until the riced cauliflower is tender.
  • Allow the riced cauliflower to cool for a few minutes. Place the cooked cauliflower onto the same tea towel and squeeze out as much water as you possibly can over the bowl. 
  • Remove the water from the bowl, then place the drained cauliflower “ball” back into the bowl. 
  • Stir in the eggs and extra virgin olive oil. 
  • Pat out the dough until it is ~1/4″ thick, try not to go any thinner, on a piece of parchment paper. 
  • Bake for 25-30 minutes, or until golden brown. 
  • Add your favorite savory pizza toppings and bake for an additional 5-10 minutes. 

Notes

* You can also purchase pre-made riced cauliflower. If so, use around 2 cups.
