A classic thanksgiving treat made healthy with a vegan crust? Count me in! My Healthy Apple Pie with Olive Oil Pie Crust is truly a beautiful, easy, and tasty dessert to make year round – made with NO sugar – and the pie crust couldn’t be easier!

While I adore challenging myself with recipes that have complexity, when it comes to the holiday season, I do enjoy recreating those simple classics that bring sweet nostalgia to leave more time to spend with family / friends, rather than being in the kitchen. That’s one of the many reasons I love this pie! It’s beyond simple and easy, yet still scrumptious!

What apples should I use to bake the pie?

My favorites include Jonagold, Honeycrisp, and Lady Gala. These apples are well-known for holding their shape in slow-cooked apple desserts, and complement the warmth of holiday spices. For a more tart apple pie, I’d recommend combining both Granny Smith and McIntosh apples – perfect for keeping things different year round!

How to achieve a golden brown crust (without burning the edges)?

The key to not burning the edge crust is to gently tint the edges with aluminum foil immediately once you see the edges browning. Typically, you can estimate this to be around the halfway baking time point.

Another secret is to use an egg wash (one whisked egg) or olive oil to brush the top pie crust and edges with. This will help the crust become beautifully golden and shiny.

For a little sweet crunch, sprinkle turbinado sugar on the crust after brushing with the egg wash or olive oil.

How to not have a juicy / runny apple pie filling?

Patience! LOL … This is the hardest part of the recipe, but definitely worth having patience. Allow the pie to cool for at least 15 minutes, so that the apples can absorb the juices and become more firm. The cooling time will depend on the temperature in your house, but shoot for the pie being at room temperature prior to serving.

How to store the leftovers?

The pie is safe sitting at room temperature (on the counter) for up to 2 days or in the fridge (covered) for up to 5 days.

To reheat the apple pie, I’d suggest heating it in the oven at 350F until warm or pop it in the toaster oven for a few minutes. While the microwave is quick and effective, it will leave you with a soggy crust.

Healthy Apple Pie with Olive Oil Pie Crust

Ingredients

Apple Pie Filling:

  • 4 cups Apples, peeled and thinly sliced
  • 2 tbsp. Maple Syrup or Honey
  • 3 tbsp. Fresh Lemon Juice, appx. 1-2 lemon
  • 1/2 tsp. Ground Nutmeg
  • 1/2 tsp. Ground Cinnamon

Olive Oil Pie Crust (makes single crust):

  • 1 1/3 cup All Purpose Flour
  • 1/3 cup Extra Virgin Olive Oil
  • 3 tbsp. Milk
  • 1/2 tsp. Ground Cinnamon
  • 1/4 tsp. Salt

Instructions

Olive Oil Pie Crust (makes single crust):

  • Preheat oven to 350F. Lightly grease (with olive oil) or line (with parchment paper) an 8" pie pan.
  • In a small bowl, whisk together the flour, salt, and ground cinnamon. Pour in the olive oil, then use a fork to mix until crumb-like texture. Add in the milk and knead until a smooth and pliable dough forms. Wrap tightly in saran wrap and place in fridge for 10 minutes.
  • Roll out the dough inbetween two sheets of wax or parchment paper (prevents sticking). Peel the top sheet of parchment paper off, then flip the rolled dough onto the prepared pie pan.
  • Lightly press the pie crust into the pan, then use a fork to the bottom 3-4 times. (Optional: Temporarily add dried beans or uncooked rice into the pan to prevent rising.) Cover the edges with aluminum foil, and bake for 12-15 minutes.

Apple Pie Filling:

  • In a large bowl, toss together the peeled / thinly sliced apples, ground nutmeg, ground cinnamon, lemon juice, and maple syrup. Add the mixture into the pie crust.
  • Bake for 40-50 minutes, or until the apples are tender and soft. Cover the crust with aluminum foil once it becomes golden brown. Allow the apple pie to cool for at least 15 minutes before serving. Enjoy!
