Healthy Olive Oil Pop Tarts (July 4th Dessert)

Imagine toaster strudels and pop tarts had a magically delicious baby… My Healthy Olive Oil Pop Tarts are the perfect July 4th Dessert that’ll dazzle your tastebuds with a no-sugar flaky crust made from olive oil and a lightly sweet berry jam.

Lately, most mornings have been starting at 4:55am promptly with not a minute to spare… and some days, it can become exhausting emotionally. So, I’ve put in a little addition that takes less than 1 minute, yet has the ability to change my whole outlook on the day to come.

I wake up, turn off my alarm, and then recite,

This is the day that the Lord has made;
    let us rejoice and be glad in it.” (Psalm 118:24 ESV)

I take a brief moment to thank God for all the blessings that I take for granted daily (like a warm bed, my ~loud~ but healthy family, my job, etc.) Then, I try to recognize that God does not gift me each breathe to survive the day, but to LIVE in His freedom!

If you woke up today, then there is something good to come. If you are breathing, then you still have a purpose to fulfill.

Whenever the morning is rough and my bed seems to call me back for a few more hours, I recite Psalm 118:24 and become excited to find out what God has in store for me today (whether it goes according to my plans or not), because I know that I am living for a greater purpose than myself.

So next time you wake up not looking forward to the day ahead, I challenge you to complete this 1 minute routine…. remember this is the day the Lord has made, thank Him for the simplest of blessings, and remember that something good is bound to come your way!

Healthy Berry Pop Tarts Made with Olive Oil

Ingredients

For the Dough:

  • 1 1/3 cup All-Purpose Flour
  • 1/3 cup Olive Oil
  • 1/4 cup Milk, plant-based or regular
  • 1/4 tsp. Kosher Salt
  • 1/2 tsp. Ground Cinnamon, optional

Additional Ingredients:

  • 1/2 cup Mixed Berry Jam, or your favorite jam flavor
  • 1 Egg (for an egg wash), substitute with olive oil for vegan alternative

Instructions

For the Dough:

  • In a medium-sized bowl, whisk together the salt and flour.
  • Add in the olive oil and use a fork or your fingers to pinch together the mixture, until crumb-like texture.
  • Add in the milk and mix together with a fork, then knead for 1-2 minutes with your hands, until the dough is smooth and pliable. Wrap tightly in saran wrap and chill in the fridge for 20 minutes.

Assembling the Pop Tarts:

  • Preheat oven to 350F.
  • Roll out the dough on a lightly floured surface or between two pieces of parchment paper to be 1/6-1/8" thick. (Think like the thickness of a quarter coin.)
  • Use a cookie cutter to make an even amount of equal-sized cut-outs, re-rolling out the dough until all of it is used. Depending on the size of your cookie cutter, you should have appx. 12-24 equal-sized cut outs.
  • In half of the cut-outs, place a small dollop of jam in the center (once again, the amount will depend on size of your cookie cutter).
  • Brush the inside edges of the dough cut-outs that have jam with the egg wash or olive oil. Place another dough cut-out on top and crimp together the edges with a fork to seal together the pop tart. Repeat for remaining pop tarts.
  • (Optional) Brush each assembled pop tart with the egg wash or olive oil. Sprinkle with coarse sugar.
  • Bake for 20-30 minutes, until golden brown.
  • Allow the pop tarts to cool completely, then (optional) drizzle with vanilla royal icing.
