If there is one thing to take away from the waffles captured above… It’s that life is too short, so add whip cream with a drizzle of maple syrup for absolute deliciousness 😉

This recipe makes about 6 waffles total, but you can make more or less depending on how much batter you are using for each waffle. Based on the assumption that you will make 6 waffles, each serving size (1 waffle) is around 240 calories, 20g protein, 21g carbohydrates, and 8g fats. A big breakfast winner!!

Ingredients

  • 3/4 cup Blackberries (halved) or Blueberries, fresh or frozen
  • 2 cups Rolled Oats
  • 2 cups Cottage Cheese
  • 6 large Brown Eggs
  • 1 tsp. Vanilla Extract
  • 1-2 tbsp. Sweetener of choice (Optional), such as honey, maple syrup, coconut sugar, etc.
  • 1/8 tsp. Kosher Salt

Instructions

  • Preheat waffle maker according to its package directions (try for medium high heat).
  • Lightly grease the bottom and top waffle iron with a little olive oil. (I recommend pouring 1 tsp. olive oil on a paper towel to coat the waffle irons.)
  • In a food processor or blender, add together all ingredients except the berries. Blend until smooth.
  • Using appx. 1/2 cup batter per waffle, pour into the bottom waffle iron. Add in a few berries, then close to bake until golden brown, about 4-5 minutes. Serve warm.
