(High Protein) Gingerbread Pancakes with Yogurt

Ingredients you’ll need:
- flour
- baking powder
- baking soda
- salt
- ground cinnamon
- ground nutmeg
- all spice
- ground ginger
- molasses
- sugar
- eggs
- buttermilk, or whole milk
- yogurt
- olive oil and/or butter

(High Protein) Gingerbread Pancakes with Yogurt
Ingredients
For the Gingerbread Yogurt Pancakes:
- 1 3/4 cups All Purpose Flour
- 3 tbsp. Granulated Cane Sugar
- 3 tbsp. Unsulphured Molasses
- 2 tsp. Baking Powder
- 1/4 tsp. Baking Soda
- 1 tsp. Ground Cinnamon
- 3/4 tsp. Ground Ginger
- 1/2 tsp. Ground Nutmeg
- 1/4 tsp. All Spice
- 1 cup Plain Yogurt
- 2 large Eggs
- 2 tbsp. Olive Oil or melted butter
- 1/2 cup Buttermilk, or whole milk
- Hot Water as needed
For Serving:
- Maple Syrup
- Whipped Cream
- Freshly Grated Nutmeg
Instructions
- In a large bowl, combine the sugar, yogurt, eggs, olive oil, molasses, and buttermilk. Whisk until very smooth.
- Add the baking powder, baking soda, pinch of salt, nutmeg, ground ginger, and all spice. Whisk until well incorporated.
- Add the flour and whisk until smooth. If the batter is too thick, add hot water until a smooth, semi runny batter that holds its shape when scooped onto the skillet. Taste the batter and add more sugar to preference.
- Using 1/4 to 1/3 cup batter per pancake, cook on a preheated griddle over medium heat. The more butter you use to cook the pancakes, the crisper and more golden the edges will be!
- Cook for 1-2 minutes untouched, until you see bubbles on top and the edges turning golden, then flip to cook another 1-2 minutes, until firm in the center when touched.
- Serve warm with whipped cream, freshly grated nutmeg (optional), and maple syrup. Warm up the maple syrup in a saucepan over medium heat, if desired!
