(High Protein) Italian Wedding Soup

This (High Protein) Italian Wedding Soup is a nourishing twist on the classic, made with rich bone broth, tender seared mini meatballs, and hearty orzo pasta. Packed with flavor and protein, this cozy soup is perfect for a satisfying weeknight dinner or a nutritious meal prep option.

Ingredients you’ll need:

  • Italian sausage links
  • Eggs
  • Parsley
  • Garlic powder, salt, & black pepper
  • Parmesan
  • Breadcrumbs
  • Yellow onion
  • Carrots
  • Celery
  • Garlic
  • White wine
  • Orzo pasta
  • Spinach

How to Store Italian Wedding Soup? How to reheat?

If you plan on meal prepping this soup, it’s best to cook the orzo separately and only stir into the soup when ready to serve. This will prevent the orzo from soaking up all the broth in the fridge.

Store leftovers in an airtight container or glass jar in the fridge up to 3-4 days for best textures and flavor. Reheat on the stovetop until warmed again.

Ingredients

  • 1 lb. Ground Beef
  • 2 Italian Pork Sausage Links casings removed
  • ¾ cup Panko Breadcrumbs
  • 2 Eggs
  • ½ cup Grated Parmesan
  • ¼ cup Fresh Parsley
  • 1 tsp. EACH: Garlic Powder, Salt, & Black Pepper
  • 4 tbsp. Olive Oil
  • ½ Yellow Onion chopped
  • 3 Celery Stalks finely chopped
  • 3 Carrots finely chopped
  • 6 Garlic Cloves minced or sliced
  • 1/3 cup White Wine
  • 6 cups Chicken Bone Broth
  • ¾ cup Orzo Pasta uncooked
  • 2 cups Spinach
  • Optional 2 Bay Leaves

Instructions

  • In a large bowl, combine the ground beef, ground sausage, breadcrumbs, eggs, parmesan, parsley, garlic powder, salt, and black pepper. Mix until very well combined.
  • Use about one tablespoon of the meat mixture per meatball. Roll in the palm of your hands to shape.
  • In a large skillet over medium high heat, add a generous drizzle of olive oil. Add the mini meatballs to sear until browned on all sides. Set aside.
  • In a large soup pot over medium high heat, add another generous drizzle of olive oil. Add the chopped onion, carrot, celery, and garlic. Sauté for 4-5 minutes, until fragrant and tender.
  • Stir in the uncooked orzo pasta.
  • Deglaze the pot with the white wine. Stir until evaporated.
  • Add the chicken broth, bay leaves, mini meatballs, and spinach. Bring to a boil, then simmer for 10 minutes. Enjoy warm with freshly grated parmesan on top to serve!

    This soup is sooo good. Kid approved and while the meatballs are a labor, it’s easy and WORTH it. Best meatballs I’ve ever had.

    My husband is allergic to garlic and onions so I sub with leeks in the broth and simply go without the powders in the meat- still holds up.

    I accidentally bought Romano instead of parm but it turned out really well! Just omitted the salt in the meatballs as Romano is salty enough. Used spicy Italian sausage also, and subbed thinly sliced kale for the spinach. So so good!
