(High Protein) Sausage & Cheddar Breakfast Biscuits

These sausage & cheddar protein breakfast biscuits are flaky, fluffy, crisp on top… I could even eat these for dinner!

Ingredients you’ll need:

  • 1 3/4 cup Plain Greek Yogurt
  • 4 large Eggs, beaten
  • 2 1/2 cups All Purpose Flour
  • 1 tsp. EACH: Garlic Powder & Salt
  • 1 tbsp. Baking Powder
  • 1/4 cup Softened Butter
  • 1 1/2 cups Baby Spinach, chopped
  • 2 tbsp. Fresh Chives, chopped
  • 1/4 cup Fresh Basil Leaves, chopped
  • 1 1/2 cups Shredded Cheddar, or freshly grated
  • 1 lb. Ground Breakfast Sausage, browned

(High Protein) Sausage & Cheddar Breakfast Biscuits

INGREDIENTS

Servings: 12

  • 1 3/4 cup Plain Greek Yogurt
  • 4 large Eggs, beaten
  • 2 1/2 cups All Purpose Flour
  • 1 tsp. EACH: Garlic Powder & Salt
  • 1 tbsp. Baking Powder
  • 1/4 cup Softened Butter
  • 1 1/2 cups Baby Spinach, chopped
  • 2 tbsp. Fresh Chives, chopped
  • 1/4 cup Fresh Basil Leaves, chopped
  • 1 1/2 cups Shredded Cheddar, or freshly grated
  • 1 lb. Ground Breakfast Sausage, browned

INSTRUCTIONS

  1. Preheat oven to 400F. Line a large baking pan with parchment paper.
  2. In a large bowl, mix together the flour, garlic powder, salt, and baking powder. Add the softened butter and mix with your hands until crumb-like texture.
  3. Add the yogurt and beaten eggs. Mix until almost all flour is absorbed.
  4. Add the chopped spinach, herbs, shredded cheddar, and browned sausage. Mix until well-combined.
  5. Use a large ice cream scooper or spoon to drop 12 evenly portioned biscuit-like shapes onto the prepared pan.
  6. Bake at 400F for 6 minutes, then reduce heat to 350F for 15-20 minutes, until deeply golden. Enjoy!

    1. I don’t have nutritional facts since it can vary slightly depending on the brands you use; however, I know there’s some website online that you can copy and paste the recipe into! SO excited to see your variations!! 🙂

    1. Hi Colby! Yes, these freeze very well. I recommend wrapping in parchment then aluminum foil to bake at 350F until thawed or let them thaw in the fridge overnight to reheat the next morn 🙂

  4. So delicious! My husband doesn’t like eggs nor yogurt so it’s hard to find high protein breakfast options for him but he loves these biscuits! Thank you so much ma’am! I calculated it: about 19g protein per biscuit. I used pork sausage so probably more protein if you use chicken or turkey.

  6. Is this actually one tablespoon of baking powder? That seems like a lot. My texture doesnt come out like yours /: your biscuits look like red lobster biscuit texture and mine look like pancake, smooth consistency when baked.

    1. hi gianny! yes, one tablespoon is correct and im so sorry to hear you’re having troubles!! one thing I might suggest is seeing if your baking powder is expired. I’ve had that happen to me before and was the root cause of flat pancakes lol
