(High Protein) Sticky Date Chia Pudding

Ingredients you’ll need:
- chia seeds
- medjool dates
- hot water
- marscapone (optional)
- plain greek yogurt
- maple syrup (or honey)
- milk of choice
- ground cinnamon

Chia pudding can be stored in the refrigerator for up to 5 days when kept in an airtight container. For best taste and texture, enjoy it within the first 2–3 days, especially if it contains fresh fruit or dairy-based milk.

(High Protein) Sticky Date Chia Pudding
Ingredients
For the Chia Seed Pudding:
- 8 Medjool Dates pitted and stems removed
- 1 cup Hot Water
- 1 cup Whole Milk
- 1 cup Plain Greek Yogurt
- 1/3 cup Maple Syrup
- 1 tsp. Ground Cinnamon
- Optional 1/4 tsp Ground Cardamom
- 10 tbsp. Chia Seeds
For the Yogurt-Mascarpone Topping:
- 1 cup Plain Greek Yogurt
- 4 oz Mascarpone Cheese softened
- 1/4 cup Maple Syrup
For the Date Caramel Topping:
- 6-8 Medjool Dates pitted and stems removed
- 1/2 cup Hot Water
- 1/4 cup Maple Syrup
Instructions
For the Chia Seed Pudding:
- In a small bowl, combine the pitted medjool dates and hot water. Let soak for 10 minutes.
- Add the medjool dates and water to a high speed blender with the milk, yogurt, cinnamon, and (optional) cardamom. Pulse until smooth. Adjust the maple syrup to desired sweetness.
- Add to a large food container and stir in the chia seeds. Let sit for 10 minutes, then stir the chia seeds again to help evenly distribute them. Store in the fridge for at least 1 hour before adding the toppings.
For the Yogurt Mascarpone Topping:
- In a bowl, combine all ingredients and whisk vigorously until smooth. Adjust the maple syrup to desired sweetness. Gently spread on top of the chia seed pudding.
For the Date Caramel:
- In a small bowl, combine the pitted medjool dates and hot water. Let soak for 10 minutes. Combine all ingredients in a high speed blender to pulse until smooth. Spread on top of the yogurt-mascarpone topping to enjoy.

It is so good! First chia seed pudding recipe that I loved and will make again. Love that the recipe is in a meal prep version. Had all the ingredients in the pantry! 🙂
The instructions say to add water to the yogurt and dates and milk but when I watch your video it looks like you don’t add the water, I just feel like I ended up with a ton of liquid so I was wondering if I read the instructions wrong 😅
Hi Racquel! Yes, so I just blended the dates and water separately and then mixed it all together. But to make it easier for yall, I suggested blending all liquids together prior to mixing in the chia seeds. They’ll absorb it within a few hours! If needed, after 1-2 hours, you can adjust and add more chia seeds to preferred thickness!
