How to Make Pickles From Scratch

Making Pickles from Scratch takes less than 15 minutes to prep and is ready in just 1-2 weeks! They’re crunchy, a little sweet, tangy, salty, and plain addicting. The perfect way to use up your abundance of garden fresh cucumbers this summer!

Ingredients you’ll need:

  • pickling cucumbers
  • distilled white vinegar
  • cold water
  • black peppercorns
  • (optional) whole cloves
  • bay leaves
  • fresh dill
  • red pepper flakes
  • sugar, or sweetener or choice
  • salt

what are “pickling cucumbers?”

Pickling cucumbers are usually smaller and shorter in size with thinner skins and a firmer, crunchier texture with smaller seeds inside. Ideally, you want to harvest these cucumbers when they’re small and young.

How long can you store homemade pickles?

If you are not properly canning the pickles, I recommend storing up 3-4 weeks from the day you made the pickles. Factors like a higher salt content and vinegar concentration can help extend the storage life.

How to Make Pickles From Scratch

Equipment

  • Airtight Resealable Glass Containers or Jars

Ingredients

  • Pickling Cucumbers
  • Distilled White Vinegar
  • Cold Water
  • Bay Leaves
  • Fresh Dill
  • Whole Black Peppercorns
  • Granulated Cane Sugar
  • Optional Whole Cloves or Cinnamon Sticks
  • Red Pepper Flakes
  • Salt

Instructions

  • Let the pickling cucumbers sit in an ice cold water bath for 10-15 minutes to firm up.
  • In the large glass jars, add 1-2 bay leaves, a small handful of fresh dill, red pepper flakes, salt, black peppercorns, whole cloves, and sugar. I use about 1 tablespoon sugar and salt per 48 oz container.
  • Fit with as many pickling cucumbers as possible, leaving 1″ space at the top.
  • Fill with half vinegar and half COLD water. Seal with the jar lid.
  • Let pickle in the fridge for 1-2 weeks, depending on the size of the cucumbers used.
