Ingredients

For the Lemon Cupcakes:

  • 3/4 cup Granulated Cane Sugar
  • Zest of 2 Lemons
  • 2/3 cup Olive Oil or vegetable oil
  • 2 large Eggs room temperature
  • 1/2 cup Sour Cream or plain yogurt (room temperature)
  • 1/4 cup Fresh Lemon Juice
  • 1/4 cup Buttermilk or whole milk
  • 1 teaspoon Vanilla Extract
  • 1 3/4 cup All Purpose Flour
  • 1 1/2 teaspoons Baking Powder
  • 1/2 teaspoon Fine Sea Salt
  • 1/4 teaspoon Baking Soda

For the Blueberry Compote:

  • 2 cups Frozen or Fresh Blueberries
  • 2 tablespoons Fresh Lemon Juice
  • 1/4 cup Granulated Cane Sugar
  • 1 tablespoon Water
  • 1 teaspoon Cornstarch

For the Lemon Buttercream:

  • 1 cup Unsalted Butter softened
  • 3 1/2 – 4 cups Powdered Sugar
  • 2 tablespoons Heavy Whipping Cream
  • 2 tablespoons Fresh Lemon Juice
  • Zest of 1 Lemon
  • 1 teaspoon Vanilla Extract
  • 1/4 teaspoon Fine Sea Salt

Instructions

To Make the Lemon Cupcakes:

  • Preheat the oven to 350F. Line a 12-cup muffin tin with cupcake liners. Set aside.
  • In a large bowl, combine the sugar and lemon zest. Rub together with your fingers for 30 seconds to release the lemon essence.
  • Add the olive oil, eggs, sour cream, lemon juice, buttermilk, and vanilla. Whisk until very smooth.
  • Add the baking powder, baking soda, and salt. Whisk until smooth.
  • Add the flour and mix just until combined. Be careful not to over mix the batter or the cupcakes can turn out dense.
  • Divide between 12-14 cupcake liners – filling them only 3/4ths full. Use a large ice cream scooper for even baking and rising in the oven.
  • Bake for 15-18 minutes, or until a toothpick inserted into the center comes out with only a few moist crumbs. The cupcakes should also spring back a little when gently pressed.
  • Let cool completely.

To Make the Blueberry Compote:

  • Combine all ingredients (except cornstarch and water) in a saucepan over medium high heat. Stir to combine. Bring to a boil, the reduce to summer 8-10 minutes, until bubbly and slightly thickened. To tell when it's done, dip a spoon in the compote then run your finger down the backside of it. If the clear streak holds its shape, it's done. If not, whisk the cornstarch and water together in a separate bowl to make a slurry then stir into the compote to cook an additional 4-5 minutes. Let cool completely before adding on top of the cupcakes.
  • To Make the Lemon Buttercream:
  • Combine the butter and 1 cup powdered sugar in the bowl of a stand mixer fitted with the whisk attachment. Beat for 2 minutes.
  • Add another 2 1/2 cups powdered sugar and the heavy whipping cream. Beat 3-4 minutes, until light and fluffy.
  • Add the fresh lemon juice, vanilla, lemon zest, and salt. Beat for 1 minute to combine. If the frosting is on the looser side, add the remaining 1/2 cup powdered sugar to beat 2-3 minutes. The longer you beat the frosting, the lighter and softer it will be!

To Assemble the Cupcakes:

  • Transfer the lemon buttercream to a large piping bag with a 1 to 1.5 ” tip. Pipe a large mound, about 1.5″ to 2″ tall, on each cupcake.
  • Use the back of a spoon to create a well in the center of each. Make sure there is still a layer of frosting at the bottom so the cupcake doesn’t absorb the blueberry compote.
  • Spoon a generous dollop of the blueberry compote in the center of each well.
  • If desired, decorate the buttercream edges with fresh thyme leaves and a few halved blueberries on top.
