Lemon & Ginger Baked Donuts with Grapefruit Glaze

Ingredients

  • 2 cups All-Purpose Flour
  • 1/2 cup Granulated Cane Sugar
  • 2 1/4 tsp. Baking Powder
  • Pinch of Salt
  • 2 large Eggs
  • 3/4 cup Olive Oil
  • 3/4 cup Milk, plant-based or regular
  • Zest and Juice of 2 Lemons
  • 1 tbsp. Fresh Ginger, grated
  • 1 tbsp. Maple Syrup, substitute with honey, as well.

For the Grapefruit Glaze:

  • 1 1/2 cups Powdered Sugar
  • 2-3 tbsp. Fresh Grapefruit Juice

Instructions

  • Preheat oven to 350F. Lightly grease your donut pan(s).
    {The recipe will make up to 16 donuts}
  • In a large mixing bowl, whisk together the flour, sugar, baking powder, and salt.
  • In a separate bowl, whisk together the eggs, olive oil, milk, lemon juice, lemon zest, grated ginger, and maple syrup.
  • Pour the egg mixture into the flour mixture, then lightly mix the ingredients together just until combined. Be careful not to over mix the batter.
  • Evenly pour the batter into your prepared donut pan(s).
  • Bake for 11-14 minutes, or until a toothpick comes out clean.
  • In the meantime, make the grapefruit glaze by simply stirring together the grapefruit juice and powdered sugar.
  • Allow the donuts to cool in their pan for at least 5 minutes, then glaze. Enjoy!
