WARNING: THESE SUGAR COOKIES ARE DELICIOUSLY ADDICTING!
This has to be one of the hardest recipes I’ve had to figure out yet! Crazy right?! With it being such a simple delectable during the Holiday season, you would think it would be easy. This recipe took me about two days of testing out different food combination, until I came up with the PERFECT sugar cookie taste. And I mean these sugar cookies are seriously good. They are not too overwhelmingly sweet, but have just the perfect amount of a sugary taste.
2 cups Flour
1/2 cup Granulated Sugar
2 tsp. Cinnamon Powder
1/4 tsp. Cardamon Powder
2 tsp. Baking Powder
9 tbsp. Extra Virgin Olive Oil
2 tbsp. Vanilla Extract
1/2 cup Raw Honey
Preheat oven to 350F.
In a mixing bowl, combine the cinnamon powder, cardamon powder, granulated sugar, baking powder, and flour. Mix until all ingredients are evenly distributed.
In a separate mixing bowl, whisk together the honey, vanilla extract, eggs, and extra virgin olive oil.
Add the honey/eggs mixture into the flour/sugar mixing bowl. Mix until all ingredients are well distributed.
(Just in case: If the dough is too oily, add a little more flour, about a tablespoon at a time. If the dough is too dry, add a little more extra virgin olive oil, about a teaspoon at a time.)
Roll out the dough, to about 1/4″ thickness, on a floured surface or parchment paper. Cut out the sugar cookies with your favorite cookie cutters.
Transfer to a parchment-lined baking pan or a non-stick baking pan. Bake for 8-12 minutes, or until cookies begin to carry a golden glow.
Highly recommend frosting them, because it would be a Christmas crime not to 😉
