Robin’s Egg Buckeyes

These Robin’s Egg Buckeyes are the perfect no-bake Easter dessert, combining creamy peanut butter centers with a chocolate coating and festive candy shell. This easy Easter treat is ideal for spring parties, holiday dessert tables, and anyone looking for a fun twist on classic buckeye candy.

Why are my buckeyes too soft or falling apart?

The peanut butter mixture likely needs more powdered sugar or more chilling time. It should be firm enough to roll into balls without sticking.

Why is my chocolate not smooth for dipping?

Chocolate can seize or get thick if overheated. Melt it slowly and consider adding a little coconut oil or shortening for a smoother consistency.

Why are my buckeyes cracking?

This happens when the centers are too cold and the chocolate is too hot. Let the peanut butter balls sit at room temp for a few minutes before dipping.

Can I use natural peanut butter?

It’s not ideal—natural peanut butter is too oily and can make the mixture too soft. Use regular creamy peanut butter for best results.

How do I keep the chocolate from pooling at the bottom?

After dipping, gently scrape the bottom on the edge of the bowl before placing on parchment paper.

Do buckeyes need to be refrigerated?

Yes, store them in the fridge for the best texture and freshness. Let them sit out briefly before serving for a softer bite.

How long do buckeyes last?

They’ll stay fresh for about 1–2 weeks in an airtight container in the refrigerator, or can be frozen for up to 2–3 months.

Ingredients

  • 16 oz Creamy Peanut Butter not “natural”
  • 1/4 cup Maple Syrup
  • 6 tbsp Softened Unsalted Butter
  • 2 tablespoons packed Light Brown Sugar
  • 2 teaspoons Vanilla Extract
  • 1/2 teaspoon Fine Sea Salt
  • 3 cups Powdered Sugar
  • 2 cups White Chocolate
  • 1 tablespoon Coconut Oil
  • Blue Spirulina Powder + Matcha Powder for class robin’s egg color
  • Dragonfruit Powder for pink color
  • 2 tablespoons Cocoa Powder + 2 tablespoons Water for the speckles

Instructions

  • In a stand mixer fitted with the paddle attachment, combine the creamy peanut butter, softened butter, maple syrup, brown sugar, vanilla extract, and salt. Beat for 2-3 minutes, until smooth.
  • Add the powdered sugar and mixer until well-combined. The texture should almost feel like play dough.
  • Scoop into 2 tablespoon sized balls, then shape into a smooth oval for an egg-like shape. Place on a large sheet pan lined with parchment paper.
  • Freeze for 15 minutes, while you prep the white chocolate.
  • Bring a few inches of water to a boil in a saucepan. Add a bowl larger than the saucepan rim to act as your double boiler. Add the white chocolate and coconut oil, stir until melted smooth.
  • Pour into a deep glass for easy dipping. Mix in your natural coloring of choice until smooth.
  • There are two methods to covering these in the chocolate. First is to place the frozen buckeyes on a wire rack over parchment paper, then pour the chocolate evenly over each. Let the chocolate set before touching/moving. The second is to stick a toothpick in the center of each buckeye and dip in the glass of melted chocolate. Twirl around to help any excess drip, then place on the parchment paper-lined pan to set.
  • For the speckles, mix the cocoa powder and water until a runny, paint-like texture. Use a pastry or small paintbrush to splatter on the speckles. Let dry for 30 minutes.
