Sheet Pan Chicken Kefta Wrap with Cucumber Salad

This Sheet Pan Chicken Kefta Wrap with a Herby Cucumber Salad and Fresh Hummus is an easy high protein, low carb recipe the whole family will love! It requires little prep time and delicious when served with crispy shoestring fries.

Ingredients you’ll need for the chicken kefta:

  • Ground Chicken, substitute with lamb or beef
  • Yellow Onion
  • Fresh Cilantro finely chopped
  • Fresh Mint finely chopped
  • Olive Oil
  • Salt
  • Smoked Paprika
  • Ground Cumin
  • Ground Turmeric
  • Zest of 1 Lemon

what is Chicken Kefta?

Chicken Kefta is a Middle Eastern dish that is made with ground chicken seasoned with lots of fresh herbs and spices, formed into long patties, then grilled or pan fried until golden.

How to Make Crispy Fries:

  • 2 lb. Russet Potatoes finely sliced
  • 2 tbsp. White Vinegar
  • 1 liter Cooking Oil
  1. Peel the potatoes and slice into 1/4″ thick fries. Place the sliced fries in a large bowl with hot water and vinegar for 20 minutes, or boil for 10 minutes.
  2. Drain the fries and pat dry. Let steam dry 5 minutes.
  3. Bring the cooking oil in a large saucepan over medium high until glistening, about 8-10 minutes.
  4. Working in small batches, add the fries to cook for 3-4 minutes, until golden. Remove with a slotted spoon to a paper towel lined plate. Repeat with remaining fries.
  5. Still working in small batches, add the fries back into the hot oil to fry another 30 seconds and up to 2 minutes, until deeply golden and crispy. Remove with a slotted spoon as before.
  6. Garnish with salt while still a little oily and hot.

How to Store and Reheat Chicken Kefta?

Store leftover chicken kefta in an airtight container in the fridge up to 2-3 days. Reheat in the oven at 400F for 5-6 minutes, until warmed through. Or you can reheat in a skillet over medium high heat with olive oil for 1-2 minutes on each side.

  • 1/2 cup Fresh Cilantro finely chopped
  • 1/4 cup Fresh Mint finely chopped
  • 1 tbsp. Olive Oil
  • 1 tsp. EACH: Salt & Smoked Paprika
  • 1/2 tsp. EACH: Ground Cumin & Ground Turmeric
  • Zest of 1 Lemon
  • Lavash Bread for serving
  • Hummus for serving
  • Pickled Onions for serving

For the Cucumber Salad:

  • 1 English Cucumber thinly sliced
  • 2 cups Baby Arugula
  • 1 cup Cherry Tomatoes sliced
  • 1/4 cup Fresh Dill chopped
  • 2 tbsp. Olive Oil
  • 2 tbsp. Red Wine Vinegar or apple cider vinegar

Instructions

For the Chicken Kefta:

  • Preheat oven to 400F. Line a rimmed baking pan with parchment paper.
  • In a bowl lined with cheese cloth or fine kitchen towel, grate the onion. Squeeze as much liquid out as possible. Set aside. Alternatively, you can finely chopped 1/2 a large yellow onion.
  • In a large bowl, combine the ground chicken with the onion, chopped herbs, lemon zest, and seasonings. Mix well.
  • Using wet hands, evenly pat out the chicken mixture on the prepared pan to a 1/2″ thick rectangle. Slice into large strips, then use the knife to gently separate each strip giving some space between them. Drizzle with olive oil.
  • Bake for 15-20 minutes, until cooked through, then broil 1-2 minutes to brown on top at the end.

For the Cucumber Salad:

  • Toss all ingredients together. Season with salt and black pepper.

To Assemble the Wrap:

  • On a piece of lavash bread, or wrap of choice, add a slather of hummus, 1-2 strips of the chicken kefta, and a generous serving of the cucumber salad. Wrap tightly, then place on a skillet greased with olive oil to cook 1-2 minutes on each side, until golden brown. Enjoy warm!

    My brother that isn’t too keen on meat enjoyed these wraps. Such a great, flavorful, and easy meal. Thanks for sharing!

    This recipe was really good but I would at least double the seasonings if not triple. Middle Eastern food is suppose to have lots of flavor. I also added some garlic and chili flakes for some kick.
