Sourdough Peach Fritter Bites

How to store and reheat peach fritters?

To store peach fritters, let them cool completely and place them in an airtight container. You can keep them at room temperature for up to a day or refrigerate them for up to 3 days. For longer storage, they freeze well—just wrap them tightly in plastic wrap and foil before placing them in a freezer-safe bag or container. They can last up to 3 months in the freezer.

For reheating:

  • Oven: Preheat your oven to 350°F (175°C). Place the fritters on a baking sheet and heat for 5-8 minutes to restore some of the crispiness.
  • Air Fryer: Heat the fritters at 350°F (175°C) for about 3-5 minutes for a quick and crispy result.
  • Microwave: If you’re in a hurry, you can microwave them for 15-20 seconds, but they won’t retain the same crisp texture.

Freezing and reheating in the oven or air fryer are your best bets for keeping them fluffy and crispy!

Sourdough Peach Fritter Bites

Ingredients

  • 3-4 large Ripe Peaches, sliced into thick bite-sized pieces
  • 1 1/3 cups All Purpose Flour
  • 2 tbsp. Granulated Cane Sugar
  • 1 tsp. Ground Cinnamon
  • 1 tsp Baking Powder
  • 1/4 tsp Salt
  • 1 cup Hot Water
  • 1/4 cup Sourdough Discard
  • 2 tbsp. Melted Butter
  • Neutral Frying Oil

For the Glaze:

  • 1 cup Powdered Sugar
  • 1 tbsp. Maple Syrup
  • 1 tsp. Ground Cinnamon
  • Milk as needed

Instructions

  • Add neutral frying oil to a large saucepan over medium high heat so it’s 4-5″ deep. Heat up until 350F, or the oil is glistening.
  • In a large bowl, combine the flour, sugar, baking powder, cinnamon, and salt. Mix well.
  • Add the sourdough discard, melted butter, and hot water. Mix until a thick batter.
  • Add the sliced peaches and toss until well coated.
  • Working in small batches, fry the peaches for 2-3 minutes, until deeply golden.
  • Use a slotted spoon to transfer to a paper towel lined plate.
  • To make the glaze, combine the powdered sugar, cinnamon, and maple syrup. Mix in 1 teaspoon milk at a time until a thick glaze. Drizzle over each the peach fritter bites. Enjoy warm!
