My (Vegan) Cranberry & Pear Cobbler is bright, cheery, tart, and sweet. It replicates the Christmas spirit in a single dish, and will bring a smile to your loved one’s face after each bite. The drop biscuits? Perfectly balances out the cobbler filling by adding a nice crisp crunch that brings good warmth.
The beauty of this healthy & easy dessert recipe is that is truly only takes 10 minutes of “hard work,” then you let the oven do its side of the magic.



As you may notice in the picture above, I prefer to dice my apples & pears pretty large for more texture when eating. However, if you don’t like to take large bites, than I recommend dicing the fruit small and evenly.
I also really recommend making small and thin drop biscuits for easy serving. Last tip/recommendation is to lightly crush the cranberries in a ziplock bag before tossing with the other ingredients. It will help create more juice for a tender, tart, and delicious cobbler.

(Vegan) Cranberry & Pear Cobbler
Ingredients
For the Cobbler Filling:
- 4 cups Cranberries, lightly smashed
- 3 Pears, peeled & largely diced
- 1 Honeycrisp Apple, peeled & largely diced
- Zest of 1 Orange
- Juice of 1 Orange
- 2 tbsp. Fresh Ginger, peeled & grated
- 2 tbsp. Flour
- 1/4 tsp. Cinnamon & Nutmeg
- 1/4 cup Maple Syrup, or Honey
For the Cobbler Topping:
- 1 1/2 cup Flour
- 1/2 cup Plant-based Milk, or regular milk
- 1/4 cup Olive Oil
- 1 tbsp. Granulated Cane Sugar
- 1 1/2 tsp. Baking Powder
- Pinch of Salt
Instructions
For the Cobbler Filling:
- Preheat oven to 400F.
- In a large bowl, toss together all of the cobbler filling ingredients until well-combined. Pour the mixture into a baking pan. Set aside.
For the Cobbler Topping:
- In another large bowl, mix together the flour, baking powder, sugar and salt. Pour in the olive oil and milk. Mix until well-combined, but be careful not to overmix.
- Drop stacks of the biscuit batter onto the cobbler filling. (Try to make thinner, rather than thicker, drop biscuits.)
- (Optional, but HIGHLY recommended) Brush each drop biscuit with a mixture of milk, honey, and olive oil for perfectly browned biscuits.
- Bake for 35-40 minutes, until the biscuts are golden brown. Enjoy warm.
