Coconut & Blood Orange Pancakes without Baking Powder

the lightest and most airy, yummy pancakes.

  • 1.5-2 cups White Whole Wheat Flour
  • 2 tsp. Baking Soda
  • 1 tsp. Sea Salt
  • 2 cups Milk
  • 2 Eggs
  • 2 tbsp. Lemon Juice
  • 2 tbsp. Maple Syrup
  • 2 tbsp. Extra Virgin Olive Oil


  • In a blender, add together the milk, lemon juice, eggs, extra virgin olive oil, and maple syrup. Pulse once or twice until lightly combined. 
  • Shift in the flour, sea salt, and baking soda. Pulse in the blender until the consistency is smooth.
  • In a pan over medium heat, add 1 tbsp. extra virgin olive oil. Add in 1/4 cup of the batter and cook until it bubbles on top of the pancake. Flip and cook for another minute or two. Repeat until all pancakes are made. 
  • Serve with blackberries and fresh, homemade powdered sugar.
