Coconut & Blood Orange Pancakes without Baking Powder
the lightest and most airy, yummy pancakes.
- 1.5-2 cups White Whole Wheat Flour
- 2 tsp. Baking Soda
- 1 tsp. Sea Salt
- 2 cups Milk
- 2 Eggs
- 2 tbsp. Lemon Juice
- 2 tbsp. Maple Syrup
- 2 tbsp. Extra Virgin Olive Oil
In a blender, add together the milk, lemon juice, eggs, extra virgin olive oil, and maple syrup. Pulse once or twice until lightly combined.
Shift in the flour, sea salt, and baking soda. Pulse in the blender until the consistency is smooth.
In a pan over medium heat, add 1 tbsp. extra virgin olive oil. Add in 1/4 cup of the batter and cook until it bubbles on top of the pancake. Flip and cook for another minute or two. Repeat until all pancakes are made.
Serve with blackberries and fresh, homemade powdered sugar.
