(Vegan) Cranberry & Pear Cobbler

Ingredients

For the Cobbler Filling:

  • 4 cups Cranberries, lightly smashed
  • 3 Pears, peeled & largely diced
  • 1 Honeycrisp Apple, peeled & largely diced
  • Zest of 1 Orange
  • Juice of 1 Orange
  • 2 tbsp. Fresh Ginger, peeled & grated
  • 2 tbsp. Flour
  • 1/4 tsp. Cinnamon & Nutmeg
  • 1/4 cup Maple Syrup, or Honey

For the Cobbler Topping:

  • 1 1/2 cup Flour
  • 1/2 cup Plant-based Milk, or regular milk
  • 1/4 cup Olive Oil
  • 1 tbsp. Granulated Cane Sugar
  • 1 1/2 tsp. Baking Powder
  • Pinch of Salt

Instructions

For the Cobbler Filling:

  • Preheat oven to 400F.
  • In a large bowl, toss together all of the cobbler filling ingredients until well-combined. Pour the mixture into a baking pan. Set aside.

For the Cobbler Topping:

  • In another large bowl, mix together the flour, baking powder, sugar and salt. Pour in the olive oil and milk. Mix until well-combined, but be careful not to overmix.
  • Drop stacks of the biscuit batter onto the cobbler filling. (Try to make thinner, rather than thicker, drop biscuits.)
  • (Optional, but HIGHLY recommended) Brush each drop biscuit with a mixture of milk, honey, and olive oil for perfectly browned biscuits.
  • Bake for 35-40 minutes, until the biscuts are golden brown. Enjoy warm.
