In another large bowl, mix together the flour, baking powder, sugar and salt. Pour in the olive oil and milk. Mix until well-combined, but be careful not to overmix.
Drop stacks of the biscuit batter onto the cobbler filling. (Try to make thinner, rather than thicker, drop biscuits.)
(Optional, but HIGHLY recommended) Brush each drop biscuit with a mixture of milk, honey, and olive oil for perfectly browned biscuits.
Bake for 35-40 minutes, until the biscuts are golden brown. Enjoy warm.
