Preheat oven to 350F.
In a mixing bowl, mix together the rolled oats, flour, baking soda, and salt.
Add in the almond butter, maple syrup, almond extract, chopped medjool dates, and chocolate chunks.
With slightly wet hands, form 4-6 cookies out of the batter. Shape the cookies into the shape you want them to be, since they won't move much in the oven.
Bake for 10-12 minutes.
