Chewy, Almond Butter & Date Cookies

Servings: 4 to 6 people


  • 1 cup Rolled Oats
  • 1/2 cup Flour
  • 1/2 cup Almond Butter, or your favorite nut butter
  • 1/2 cup Medjool Dates, chopped and pitted
  • 1/4 cup Maple Syrup, or Honey
  • 1/2 tsp. Baking Soda
  • 1/2 tsp. Almond Extract, or Vanilla Extract
  • 1/2 cup Chocolate, chopped


  • Preheat oven to 350F.
  • In a mixing bowl, mix together the rolled oats, flour, baking soda, and salt.
  • Add in the almond butter, maple syrup, almond extract, chopped medjool dates, and chocolate chunks.
  • With slightly wet hands, form 4-6 cookies out of the batter. Shape the cookies into the shape you want them to be, since they won't move much in the oven.
  • Bake for 10-12 minutes.
