Preheat oven to 450F. Line a baking pan with parchment paper.
Cut the potatoes in quarters (wedge-like shaped), then place in a large bowl. Cover the potatoes with warm water to sit for 10 minutes.
In the meantime, whisk together the seasonings (onion powder, garlic powder, sea salt, black pepper).
Drain the potatoes, pat dry with a paper towel or kitchen cloth, then evenly spread out on the prepared baking pan. Drizzle the potatoes with the olive oil, sprinkle with the seasoning mixture, then evenly coat by tossing all ingredients together with your hands.
Bake for 20-25 minutes, then flip to bake an additional 10 minutes.
