Ingredients

Easy Blackened Salmon:

  • 2 Salmon Fillets
  • 1 tsp. Extra Virgin Olive Oil
  • 1 tbsp. Ground Paprika
  • 1 tsp. Ground Cayenne Pepper
  • 1/2 tbsp. Onion Powder
  • 1/4 tsp. Black Pepper
  • 1/4 tsp. Dried Oregano
  • 1/4 tsp. Dried Thyme, or Dried Basil
  • 1/4 tsp. Sea Salt
  • Lemon, for serving (optional)

Crispy Potato Wedges:

  • 1 lb. Russet Potatoes or Yukon Gold Potatoes
  • 1 1/2 tbsp. Extra Virgin Olive Oil
  • 1 tsp. Garlic Powder (optional)
  • 1 tsp. Onion Powder
  • 1/2 tsp. Sea Salt
  • 1/4 tsp. Black Pepper

Instructions

Crispy Potato Wedges:

  • Preheat oven to 450F. Line a baking pan with parchment paper.
  • Cut the potatoes in quarters (wedge-like shaped), then place in a large bowl. Cover the potatoes with warm water to sit for 10 minutes.
  • In the meantime, whisk together the seasonings (onion powder, garlic powder, sea salt, black pepper).
  • Drain the potatoes, pat dry with a paper towel or kitchen cloth, then evenly spread out on the prepared baking pan. Drizzle the potatoes with the olive oil, sprinkle with the seasoning mixture, then evenly coat by tossing all ingredients together with your hands.
  • Bake for 20-25 minutes, then flip to bake an additional 10 minutes.

Easy Blackened Salmon:

  • In a small bowl, whisk together all the seasonings (ground paprika, ground cayenne pepper, onion powder, black pepper, dried oregano, dried thyme, and salt). Set aside.
  • Pat the salmon with a paper towel to remove any excess moisture, drizzle with the olive oil, then generously rub in the seasoning mixture.
  • Add the salmon to the baking pan with the potatoes, and (optional) your choice of vegetables tossed in a little olive oil and seasoned with salt.
  • Bake for 12-15 minutes, until fully cooked. For crispier edges, broil for the last 2 minutes. Enjoy warm.
