Family-Style Italian Ciabatta Sandwiches

During the summer months, making Family-Style Italian Ciabatta Sandwiches are an easy way to feed a crowd without the mess! It's satisfying, keeps you full for hours, and easy to pack without getting soggy.

Ingredients you'll need:

  • 1 large Ciabatta Loaf
  • ½ cup Basil
  • ½ cup Mayo
  • 4 oz. Soppressata, thinly sliced, or salami of choice
  • 6-8 slices Provolone Cheese
  • ½ - ¾ lb. Deli Turkey, thinly sliced
  • ½ cup Pitted Olives, roughly chopped
  • ½ cup Sliced Pepperoncici
  • 2 cups Baby Arugula
  • 2 tbsp. Olive Oil
  • 1-2 tbsp. Apple Cider Vinegar
  • Salt & Black Pepper to taste
  • Parchment Paper, for wrapping

How to wrap sandwiches to keep crisp (and not get soggy)?

I recommend wrapping in parchment paper, then either wrapping again in foil or plastic wrap to keep the parchment paper from coming apart. The parchment will help keep the sandwich crisp, but there's also other methods to keep a sandwich from going soggy like being intentional with the liquids or dressing on the sandwich. Make sure nothing super liquid or soft is touching the bread. Keep moisture-less foods like cheese and arugula as the components touching the bread.

How to Make Sandwiches in Advance?

Following the packing instructions above, then you can either store in a cool environment for 1 hour or in the fridge up to 3 days.

Ingredients

Servings: 6-8

  • 1 large Ciabatta Loaf
  • ½ cup Basil
  • ½ cup Mayo
  • 4 oz. Soppressata, thinly sliced, or salami of choice
  • 6-8 slices Provolone Cheese
  • ½ - ¾ lb. Deli Turkey, thinly sliced
  • ½ cup Pitted Olives, roughly chopped
  • ½ cup Sliced Pepperoncici
  • 2 cups Baby Arugula
  • 2 tbsp. Olive Oil
  • 1-2 tbsp. Apple Cider Vinegar
  • Salt & Black Pepper to taste
  • Parchment Paper, for wrapping

Instructions

  1. In a high-speed blender, combine the mayo and basil. Pulse until smooth, adding lemon juice to taste (optional).
  2. Slice the ciabatta loaf in half lengthwise.
  3. Slather the basil mayo on the bottom half followed by the sliced provolone, salami, turkey, olives, pepperoncini, and baby arugula.
  4. Drizzle the arugula with the olive oil, vinegar, and season with salt and black pepper to taste. Slice into individual sandwiches, wrap in parchment paper until ready to serve, and enjoy!
