Easy Tortilla Quiche
This healthy tortilla quiche is an easy breakfast or lunch that is high in protein and will keep you full for hours!
Ingredients

- 1 burrito-size Tortilla, warmed
- 6 large Eggs
- 1/3 cup Cottage Cheese
- Salt & Black Pepper, to taste
- 1 cup Vegetables of choice, finely chopped
- 1/3 cup Shredded Mozzarella
- Fresh Basil, chopped, for garnishing
Instructions
- Preheat oven to 350F. Line a 6-8" cake pan with parchment paper.
- Press the warmed tortilla into the pan to be the "crust."
- Add the eggs and cottage cheese. Season with salt and black pepper to taste. Whisk until smooth.
- Add the chopped (and sautéed if desired) vegetables and mix just until combined.
- Add the shredded cheese on top.
- Bake for 15-20 minutes, until set in the center.
- Garnish with the freshly chopped basil to enjoy!
