Honey Chipotle Chuck Roast Burnt Ends
These slow smoked Honey Chipotle Burnt Ends made with chuck roast are the juiciest, most tender bites that just fall apart on the fork! They're perfect for a make ahead summer hosting recipe, or easy family dinner.
Ingredients
Servings: 6-8
- Equipment: Masterbuilt Gravity Series Charcoal Grill
- 4-5 lbs. Chuck Roast, or brisket
- 1 ½ tsp. Salt
- 1 ½ tsp. Black Pepper
- 1 ½ tsp. Garlic Powder
- 2 tbsp. BBQ Rub
- 3 Chipotles in Adobo Sauce, finely chopped
- ¼ cup Carolina BBQ Sauce
- ¼ cup Honey
- ¼ cup Brown Sugar
- 2-3 tbsp. Butter
Instructions
- Heat up your smoker to 250F.
- Cut the chuck roast to 1” cubes.
- Season the cubes with the salt, black pepper, garlic powder, and BBQ rub.
- Place the cubes onto the smoker racks. Cook with the grill lid closed, spritzing with water every 30 minutes for about 2 hours.
- When the internal temperature of the meat reaches 165F, remove from the smoker and add to a casserole tin.
- Add the chopped chipotles, bbq sauce, honey, brown sugar, and butter into the aluminum foil tin. Toss to combine, the cover tightly with foil.
- Place pack on the smoker to cook until the internal temperature reaches 205F and is very tender, about 30-40 more minutes.
- If time allows, let the meat rest 20-30 minutes before serving. Enjoy warm!
