Carne Asada Loaded Fries

Ingredients

For the Carne Asada:

  • 1 ½ lbs. Skirt Steak
  • 1 White Onion thinly sliced
  • 3 Garlic Cloves minced
  • 1 Jalapeno finely chopped
  • ½ cup Fresh Cilantro chopped
  • 1 tsp. EACH: Salt Smoked Paprika, Ground Cumin, & Dried Oregano
  • Juice of 1 Lime
  • Juice of 1 Orange
  • ¼ cup Olive Oil
  • Guacamole for serving
  • Cotija Cheese for serving
  • Lime Wedges for serving
  • Pickled Onions for serving

For the Fries:

  • 2 lb. Russet Potatoes finely sliced
  • 2 tbsp. White Vinegar
  • 1 liter Cooking Oil

Instructions

To Marinate the Skirt Steak:

  • Using a meat mallet or heavy rolling pin (covered with plastic wrap), pound the skirt steak to ¼” thick. Place in a large bowl with the remaining ingredients. Massage all ingredients together so the steak is well coated in the seasonings. Cover and let sit on the counter for 30 minutes.

To Make the Fries:

  • Peel the potatoes and slice into 1/4″ thick fries. Place the sliced fries in a large large bowl with cold water, 2 cups of ice cubes, and vinegar for 20 minutes, or boil for 10 minutes.
  • Drain the fries and pat dry.
  • Bring the cooking oil in a large saucepan over medium high until glistening, about 8-10 minutes.
  • Working in small batches, add the fries to cook for 3-4 minutes, until golden. Remove with a slotted spoon to a paper towel lined plate. Repeat with remaining fries.
  • Still working in small batches, add the fries back into the hot oil to fry another 30 seconds and up to 2 minutes, until deeply golden and crispy. Remove with a slotted spoon as before.
  • Garnish with salt while still a little oily and hot.

To Grill the Skirt Steak:

  • Preheat your Masterbuilt Gravity Series Charcoal Grill to 500F.
  • Add the marinated skirt steak directly on the grill racks, and place onions on top of the steak. Cover with the grill lid to cook 3-4 minutes on each side, or until internal temperature reaches 130F. Remove from grill to rest 5 minutes before slicing thin.
  • Alternatively, you can sear the steak and onions in a large skillet over medium high heat with olive oil. Cook for 3-4 minutes on each side.

To Assemble the Loaded Fries:

  • To assemble the loaded fries family-style, place the crispy fries on a large serving platter. Top with thinly sliced carne asada and onions, guacamole, pickled onion, cotija, and freshly chopped cilantro. Enjoy immediately with lime wedges on the side!
