Preheat oven to 375F. Line a small baking pan with parchment paper.
Salt both sides of the steak, then place uncovered in the fridge for 30 minutes.
TIP: This would be a good time to start on the shoestring fries.
In the meantime, crush the peppercorns in a blender or mortar and pestle. Place in a shallow bowl.
Press one side of each filet mignon into the crushed peppercorns to coat.
Place a stainless steel or cast iron skillet over medium high heat. Add the olive oil to heat up for 1 minute, until glistening.
Add the steak peppercorn-side down to sear untouched for 3 minutes. Flip then add the butter, smashed garlic, and rosemary. Sear another 2-3 minutes, until deeply golden, basting the steak in the aromatic butter.
Transfer the steak to the prepared pan to finish cooking in the oven for 4-8 minutes, or until desired doneness.
Let rest at least 5 minutes before slicing into 1/2" thick slices.
