BearClaw Pretzel Bites & Beer Cheese Dip

I call these my Bearclaw Pretzel Bites made with sourdough discard and served with a homemade Beer Cheese Dip made with ginger beer for a nonalcoholic twist (although you can still use regular beer)… a seriously delicious appetizer for your upcoming Superbowl party!

Ingredients to Make Beer Cheese Dip:

  • Unsalted Butter
  • Flour
  • Whole Milk
  • Ginger BeerĀ or regular beer
  • Worcestershire Sauce
  • Dijon Mustard
  • Garlic Powder
  • Smoked Paprika
  • Salt
  • Freshly Grated Sharp Cheddar Cheese*

*Freshly grating your cheddar cheese will make a significant difference in the final outcome and creaminess, because pre-shredded cheese has a special coating to help it not all melt together during shipping.

Homemade Beer Cheese Dip (Nonalcoholic)

Ingredients

  • 2 tbsp. Unsalted Butter
  • 3 tbsp. Flour
  • 3/4 cup Whole Milk
  • 2/3 cup Ginger Beer or regular beer
  • 1 tsp. Worcestershire Sauce
  • 1 tsp. Dijon Mustard
  • 1/2 tsp. Garlic Powder
  • 1/4 tsp. Smoked Paprika
  • Salt to taste
  • 8-10 oz. Freshly Grated Sharp Cheddar Cheese

Instructions

  • Freshly grate the sharp cheddar cheese. Set aside.
  • In a large saucepan over medium heat, add the butter and flour. Whisk until the flour has been absorbed by the melted butter, and forms a paste.
  • Gradually pour in the whole milk as you whisk.
  • Slowly pour in the beer and whisk another minute, until thickened up slightly.
  • Whisk in the Worcestershire sauce, dijon, garlic powder, and smoked paprika.
  • Add in half of the grated cheese and stir until completely melted. Stir in the remaining until a smooth yet thick cheese dip. Season with salt and black pepper to taste. Enjoy with the homemade pretzel bites and cooked sausage!
