Preheat oven to 375F. Generously grease 1-2 muffin tins with olive oil.
On a clean surface, layer the phyllo sheets on top of one another.
Working on the shorter end of the phyllo sheets rectangle, evenly spread the goat cheese over 2” at the edge.
Layer the fig preserves, chopped pecans, sliced figs, hot honey, and fresh thyme. Roll up tightly light a burrito.
Slice into 1” – 1.5” pieces. Place into individual muffin tin cups.
Drizzle each very generously with olive oil, about 2 teaspoons each. This is what will make them extra flaky and crunchy!
Bake them for 20-25 minutes, rotating the pan halfway through baking, until deeply golden on top.
Let rest 10 minutes before scooping out with a spoon.
Drizzle with extra hot honey and garnish with fresh thyme leaves to serve!
