Slow Cooked Chuck Roast

Ingredients

  • BUBBL’R Triple Berry Breez’r for serving
  • 1 Boneless Chuck Roast 3-4 lbs
  • Salt & Black Pepper
  • 2 tbsp. Olive Oil
  • 3-4 Potatoes diced
  • 5-6 Carrots peeled and chopped
  • ¼ cup Fresh Herbs such as rosemary, thyme, and/or sage

Instructions

  • Preheat oven to 325F.
  • Place a large dutch oven over medium high heat. Let heat up for 2 minutes.
  • In the meantime, very well season all sides of the chuck roast with salt and black pepper.
  • Add the olive oil, then add the seasoned chuck roast to sear 2-3 minutes on each side.
  • Remove from heat to add the chopped potatoes, carrots, and herbs. Add ¼ cup water.
  • Cover with the dutch oven lid and place in the preheated oven to slow cook for 2 ½ - 3 hours. For larger roast, it may take up to 4 hours. It will be done once you can easily shred the meat between two forks.
  • Change the oven heat to 425F.
  • Shred the beef between two forks, then toss back in with the potatoes and carrots. Roast in the oven for another 15-30 minutes, stirring the meat halfway through.
