Slow Cooked Chuck Roast with carrots & potatoes

This Slow Cooked Chuck Roast with carrots and potatoes is an easy dinner that can be prepped hours in advance so that dinnertime is ready to be effortlessly served. My Nana used to make this every time it snowed since she lived just down the road growing up and I remember getting SO excited in anticipation for it!

Ingredients you’ll need:

  • BUBBL’R Triple Berry Breez’r, for serving
  • 1 Boneless Chuck Roast (3-4 lbs)
  • Salt & Black Pepper
  • 2 tbsp. Olive Oil
  • 3-4 Potatoes, diced
  • 5-6 Carrots, peeled and chopped
  • ¼ cup Fresh Herbs, such as rosemary, thyme, and/or sage

How to Store and Reheat Chuck Roast:

Store chuck roast after it’s cooled to room temperature in an airtight container in the fridge up to 4-5 days, or in the freezer up to 1 month in a freezer-safe bag. Reheat either in the oven at 400F covered with foil for 15-20 minutes, then uncovered for 5-8 minutes to crispen up the outer pieces. Or on the stovetop over medium high heat!

Ingredients

  • BUBBL’R Triple Berry Breez’r for serving
  • 1 Boneless Chuck Roast 3-4 lbs
  • Salt & Black Pepper
  • 2 tbsp. Olive Oil
  • 3-4 Potatoes diced
  • 5-6 Carrots peeled and chopped
  • ¼ cup Fresh Herbs such as rosemary, thyme, and/or sage

Instructions

  • Preheat oven to 325F.
  • Place a large dutch oven over medium high heat. Let heat up for 2 minutes.
  • In the meantime, very well season all sides of the chuck roast with salt and black pepper.
  • Add the olive oil, then add the seasoned chuck roast to sear 2-3 minutes on each side.
  • Remove from heat to add the chopped potatoes, carrots, and herbs. Add ¼ cup water.
  • Cover with the dutch oven lid and place in the preheated oven to slow cook for 2 ½ – 3 hours. For larger roast, it may take up to 4 hours. It will be done once you can easily shred the meat between two forks.
  • Change the oven heat to 425F.
  • Shred the beef between two forks, then toss back in with the potatoes and carrots. Roast in the oven for another 15-30 minutes, stirring the meat halfway through.

  2. Everything was great except my roast came out pretty dry but I can see yours is quite juicy. What did I do wrong?
