Thanksgiving Smoked Chuck Roast

Ingredients

  • 3-4 lb. Chuck Roast
  • 1 Yellow Onion
  • 1 ½ cups Apple Cider
  • 1 ½ cups Beef Stock
  • 2 sprigs Rosemary
  • 2 tbsp. Seasoning of choice (substitute with salt and black pepper)
  • 1 tbsp. Olive Oil

Instructions

  • Rub the chuck roast with olive oil, then very well season all sides. Press the seasoning into the meat. Set aside at room temperature for 20-30 minutes prior to cooking.
  • Preheat the Masterbuilt Gravity Series Grill to 225F.
  • In a bowl or jar, combine the apple cider and beef stock.
  • Place the seasoned chuck roast directly on the grilling racks. Spritz or lightly brush with the apple cider mixture, then let smoke for 3 hours. Every hour, you will want to spritz or brush more of the apple cider mix on the chuck roast.
  • In an oven-safe skillet, add the thinly sliced onions. Place the chuck roast on top of the onions and add the remaining apple cider mixture (at least 2 cups liquids).
  • Cover the skillet with foil and close the grill lid to smoke 3-4 more hours. The longer is smokes, the more tender the meat will be.
  • Let the meat rest for at least 15 minutes prior to shredded between two forks. Enjoy!
