Thanksgiving Smoked Chuck Roast
Every Thanksgiving, one of my cousins makes this slow smoked chuck roast that is super tender and its leftovers make for incredible sourdough focaccia sandwiches. So, this year, I’m sharing my spin on his speciality!

Ingredients you’ll need:
- Chuck Roast
- Yellow Onion
- Apple Cider, or replace with more beef stock
- Beef Stock
- Rosemary
- Seasoning of choice
- Olive Oil

How do I know my chuck roast is done?
The easiest way to know if your smoked chuck roast is done cooking is when you can easily shred it between two forks.
Uh oh! If you’ve found that you may have an “uh oh” moment and your chuck roast was cooked too fast at a high temperature, it’s okay! Just let it rest 15 minutes, then thinly slice with a serrated knife against the grain (!!) . It will still be just as delicious!

Thanksgiving Smoked Chuck Roast
Ingredients
- 3-4 lb. Chuck Roast
- 1 Yellow Onion
- 1 ½ cups Apple Cider
- 1 ½ cups Beef Stock
- 2 sprigs Rosemary
- 2 tbsp. Seasoning of choice (substitute with salt and black pepper)
- 1 tbsp. Olive Oil
Instructions
- Rub the chuck roast with olive oil, then very well season all sides. Press the seasoning into the meat. Set aside at room temperature for 20-30 minutes prior to cooking.
- Preheat the Masterbuilt Gravity Series Grill to 225F.
- In a bowl or jar, combine the apple cider and beef stock.
- Place the seasoned chuck roast directly on the grilling racks. Spritz or lightly brush with the apple cider mixture, then let smoke for 3 hours. Every hour, you will want to spritz or brush more of the apple cider mix on the chuck roast.
- In an oven-safe skillet, add the thinly sliced onions. Place the chuck roast on top of the onions and add the remaining apple cider mixture (at least 2 cups liquids).
- Cover the skillet with foil and close the grill lid to smoke 3-4 more hours. The longer is smokes, the more tender the meat will be.
- Let the meat rest for at least 15 minutes prior to shredded between two forks. Enjoy!
