(5-Ingredient) Strawberry Cheesecake Summer Pastries

These Flaky Strawberry Cheesecake Pastries are an insanely easy summer baking recipe that uses only 5 ingredients, is great for hosting summer dinner parties, book club, or a sweet treat for the girls!

Ingredients you'll need:

  • 1 bar Tony Chocolonely Strawberry Cheesecake White Chocolate
  • 8 oz. Cream Cheese, softened
  • 1 cup Fresh Strawberries, thinly sliced
  • 1 sheet Frozen Puff Pastry, thawed
  • 1 Egg, beaten
  • (Optional) Shaved Almonds, or substitute with granulated cane sugar

How to Make these Strawberry Cheesecake Puff Pastries:

  1. Preheat oven to 400F. Line a large baking pan with parchment paper.
  2. Dust the parchment paper with flour, add the thawed puff pastry on top, then gently roll out any crinkles.
  3. Slice the puff pastry into 8 equal pieces,
  4. Score the edges of the puff pastry with a knife so you have a ½” border, then brush with an egg wash.
  5. (Optional) Garnish the edges with granulated sugar or shaved almonds.
  6. Bake for 12-15 minutes, until puff up and golden.
  7. In the meantime, melt the chocolate in the microwave in 30 second intervals. Add to the softened cream cheese and mix until smooth. Transfer to a piping bag.
  8. Remove the puff pastries from the oven and pipe the cheesecake filling in the centers. Layer with the thinly sliced strawberries.
  9. Bake for an additional 5-10 minutes, until the strawberries are juicy and pastry edges are deep golden.

Can Puff Pastry Desserts be Made in Advance?

You can prep the strawberries and filling in advance, but I recommend waiting to bake the puff pastry until ready to serve (or up to an hour before serving). They will hold their texture at room temperature (uncovered) for up to 3-4 hours, but puff pastry desserts are always best enjoyed immediately for ultimate flakiness and crunch!
