Sausage & Egg Smashed Breakfast Tacos

Crispy corn tortillas with breakfast sausage, soft scrambled eggs, bacon, chives, and a bit of hot sauce to spice it up! These Sausage & Egg Smashed Breakfast Tacos are an easy breakfast perfect for the weekends.

Ingredients you'll need:

  • 1 b. Breakfast Sausage
  • 10-12 Corn Tortillas
  • 8 large Eggs
  • 2 tbsp. Whole Milk
  • 2 tbsp. Butter
  • 2 tbsp. Olive Oil
  • Fresh Chives, chopped
  • Sliced Avocado
  • (Optional) Bacon, cooked
  • (Optional) Hot Sauce
  • Salt & Black Pepper, to taste

How to Make Smashed Breakfast Tacos:

  1. In a large skillet over mdum heat, add 1 tablespoon butter.
  2. While the butter melts, whisk the eggs, milk, and salt and black pepper to taste until smooth. Pour into the skillet.
  3. Use a spatula to soft scramble the eggs, adding the remaining butter halfway through cooking.
  4. If needed, clean the skillet.
  5. Using 2-3 tablespoons ground breakfast sausage per corn tortilla, smash the sausage over the surface of the tortilla.
  6. Working in small batches, drizzle the pan with olive oil then cook the smashed tortillas face side down for 3-5 minutes, until golden brown. Flip and cook another 3-4 minute, until crispy.
  7. Serve the smashed tacos warm layered with the slice avocado, soft scrambled eggs, chives, bacon, an hot sauce. Enjoy!

What to Serve with Breakfast Tacos:

  • Arugula & Lemon Vinaigrette Salad
  • Fresh Fruit, like cantaloupe or blackberries
  • Orange Juice, or any freshly squeezed juices
