(High Protein) Sausage & Cheddar Breakfast Biscuits

These sausage & cheddar protein breakfast biscuits are flaky, fluffy, crisp on top… I could even eat these for dinner!

Ingredients you'll need:

  • 1 3/4 cup Plain Greek Yogurt
  • 4 large Eggs, beaten
  • 2 1/2 cups All Purpose Flour
  • 1 tsp. EACH: Garlic Powder & Salt
  • 1 tbsp. Baking Powder
  • 1/4 cup Softened Butter
  • 1 1/2 cups Baby Spinach, chopped
  • 2 tbsp. Fresh Chives, chopped
  • 1/4 cup Fresh Basil Leaves, chopped
  • 1 1/2 cups Shredded Cheddar, or freshly grated
  • 1 lb. Ground Breakfast Sausage, browned

Ingredients

Servings: 12

  • 1 3/4 cup Plain Greek Yogurt
  • 4 large Eggs, beaten
  • 2 1/2 cups All Purpose Flour
  • 1 tsp. EACH: Garlic Powder & Salt
  • 1 tbsp. Baking Powder
  • 1/4 cup Softened Butter
  • 1 1/2 cups Baby Spinach, chopped
  • 2 tbsp. Fresh Chives, chopped
  • 1/4 cup Fresh Basil Leaves, chopped
  • 1 1/2 cups Shredded Cheddar, or freshly grated
  • 1 lb. Ground Breakfast Sausage, browned

Instructions

  1. Preheat oven to 400F. Line a large baking pan with parchment paper.
  2. In a large bowl, mix together the flour, garlic powder, salt, and baking powder. Add the softened butter and mix with your hands until crumb-like texture.
  3. Add the yogurt and beaten eggs. Mix until almost all flour is absorbed.
  4. Add the chopped spinach, herbs, shredded cheddar, and browned sausage. Mix until well-combined.
  5. Use a large ice cream scooper or spoon to drop 12 evenly portioned biscuit-like shapes onto the prepared pan.
  6. Bake at 400F for 6 minutes, then reduce heat to 350F for 15-20 minutes, until deeply golden. Enjoy!
