Cheddar & Chive Same-Day focaccia Recipe

Meet your new go-to Cheddar & Chive Same-Day Focaccia, a quick and easy recipe that delivers all the crisp edges and chewy, airy texture you love—without any sourdough starter. Loaded with sharp cheddar, fresh chives, and golden olive oil, this foolproof focaccia brings bakery-quality flavor to your table in just one day.

Ingredients you’ll need:

  • bread flour

  • instant yeast

  • olive oil
  • garlic
  • butter
  • parsley & chives
  • cheddar & mozzarella

Can you prep the yeast-based focaccia in advance?

Yes — you can absolutely prep yeast-based focaccia in advance, and it sometimes it turns out even better when you do. Here are my recommendations for the best make-ahead options:

1. Prep the Dough the Day Before (Best Flavor & Texture)

  • Mix and knead the dough as usual.
  • Place it in a lightly oiled container, cover, and refrigerate for up to 24 hours.
  • The cold rise slows fermentation and creates deeper flavor and better chew.
  • The next day, bring to room temperature, stretch into the pan, let it rise, and bake.

2. Par-Bake for a Super Quick Finish

  • Bake the focaccia for 10–12 minutes, until set but not deeply golden brown.
    • It is VERY IMPORTANT that the dough is fully set in the middle. It should be at the point of cooked but not crispy.
  • Cool, wrap well, and refrigerate for 1–2 days or freeze for up to 2 months.
  • Finish baking at 425°F (220°C) for 8–10 minutes when ready to serve. Drizzle with more extra virgin olive oil for extra crisp!!

Important Tip

Avoid fully assembling (dough + wet toppings) the day before and leaving it at room temp—this can cause over-proofing and a soggy top.

How to Store Leftover Focaccia:

Room Temperature (Best for 1–2 Days)

Store leftover focaccia in a loosely covered container or wrap it in parchment or foil. Avoid airtight plastic, which softens the crust. Keep it at room temperature for up to 2 days.

Refrigerator (Not Ideal, but Works for 3–4 Days)

If you must refrigerate, wrap the focaccia in foil or place it in a container lined with paper towels to reduce moisture. Reheat before serving to revive the texture.

Freezer (Best for Long-Term Storage)

Wrap individual pieces tightly in plastic wrap, then place them in a freezer bag or airtight container. Freeze for up to 2 months. Reheat directly from frozen in a 375°F (190°C) oven for 8–10 minutes.

Reheating Tip

To restore crisp edges and soft interior, warm focaccia in a 400°F (200°C) oven for 5–8 minutes and add a light drizzle of olive oil before reheating if desired.

Ingredients

For the Focaccia Dough:

  • 560 grams Bread Flour
  • 530 grams Warm Water
  • 1 tbsp. Fine Sea Salt
  • 2 1/4 tsp. Instant Yeast typically 1 package
  • 2 tsp. Granulated Cane Sugar
  • 8 tbsp. Olive Oil

For the Cheddar & Chive Flavor:

  • 1 1/2 cups Sharp Cheddar freshly grated
  • 1 cup Low Moisture Mozzarella freshly grated
  • 3 tbsp. Fresh Chives chopped
  • 1/4 cup Fresh Parsley finely chopped
  • 1/3 cup Unsalted Butter melted
  • Optional 2 Garlic Cloves, grated

Instructions

To Make the Focaccia Dough:

  • Combine all ingredients EXCEPT olive oil in a large bowl. Mix until a shaggy dough, and flour is fully absorbed.
  • Cover and set aside in a warm environment for 30 minutes.
  • After 30 minutes, imagine the bowl divided into four corners. Scoop one corner from the bottom, lift as high as you can without breaking the dough, then fold over into the center. Rotate the bowl to repeat with the remaining 3 "corners." This helps to trap air in the dough.
  • Cover and rest in a warm environment for 30 minutes. (TIP: If the dough is still sticky at this point, add up to 80 grams more flour to help it become workable. Winter months and elevation can also play into bread baking.)
  • After 30 minutes, add the chopped chives and half of the grated cheeses. Repeat the lift and fold process explained above.
  • Cover and rest 30 minutes.
  • Line a 9×13″ baking pan with parchment paper. Drizzle generously with olive oil.
  • Repeat the lift and fold process once more, then transfer the dough out to a lightly floured surface. Gently stretching the dough from underneath, stretch out to fit the size of a 9×13″ baking pan.
  • If wanting to make it pull-apart dinner roll-style: Use a dough scraper or knife to slice the stretched focaccia into individual rolls.
  • Place in the prepared baking pan.
  • Cover and let rest 30 minutes.
  • Preheat the oven to 425F.
  • Drizzle the focaccia generously with olive oil. Top the focaccia with the remaining grated cheeses, then grease your hands with olive oil to create dimples in the dough with your fingers. Season with flaky salt.
  • Bake for 20-25 minutes, rotating the pan halfway through, until deeply golden on top.

To Make the Buttery Garlic-Herb Topping:

  • Combine the melted butter, chopped parsley, and grated garlic over medium low heat. Cook for 1 minute, then brush onto the baked focaccia.
  • Let cool at least 30 minutes before serving!

    This was my first recipe trying to bake bread after a couple of disasters. It was very easy to follow and delicious! I wonder if parchment paper is needed for this though we noticed the bottom didn’t crisp up as much leaving the bottom slightly oily, but it tastes amazing, was very easy to make, and we’re excited to continue baking some bread with you!

    I’ve used this recipe so many times and it’s my third attempt at anything bread based, the other attempts I would consider a failure, but this recipe worked so well. Very easy to follow and absolutely delicious. Not great for my waistline, my only complaint.
