Homemade Brioche Burger Buns

Hosting a summer BBQ can be really easy when you focus on a few key elements and keep the rest simple, such as making these Homemade Brioche Burger Buns to make the Ultimate Smashburgers!

Ingredients you’ll need:

  • 1 cup Warm Water
  • 10 grams Active Dry yeast, about 3 teaspoons
  • 4 tbsp. Granulated Cane Sugar
  • 1 tbsp. Fine Sea Salt
  • 3 ½ – 4 cups All Purpose Flour
  • 2 Eggs
  • 1 Egg Yolk
  • ¾ cup Softened Unsalted Butter, cubed
  • Sesame Seeds, for garnishing

How to Make Homemade Brioche Burger Buns:

  1. To Make the Dough: In the bowl of a stand mixer fitted with the paddle attachment, add the warm water, 2 tablespoons sugar, and yeast. Let the yeast activate for 15 minutes.
  2. In the meantime, combine 1 egg and the egg yolk in a small bowl. Beat until smooth.
  3. Add the flour, salt, and remaining sugar. Mix until a shaggy dough, then add the beaten eggs. Knead on LOW for 8-10 minutes, until a smooth dough.
  4. The First Rise: Add to a greased bowl, cover with a damp kitchen cloth or saran wrap, and set aside to proof in a warm environment for 1-2 hours, until doubled in size.
  5. Line a large baking pan with parchment paper.
  6. Punch down the dough, then transfer to a clean surface to divide into 10 equal pieces. Roll each piece into a tight ball. Place on the prepared pan.
  7. (Optional) Gently pat the tops if the dough balls are too high.
  8. The Second Rise: Cover to rise 30-40 minutes, until doubled in size.
  9. To Bake: Preheat the oven to 375F.
  10. Beat the remaining egg until smooth, then lightly brush on the tops of burger buns. Garnish with the sesame seeds.
  11. Bake for 12-15 minutes, rotating the pan halfway through, until tops are golden brown.

How to Store Homemade Burger Buns to Keep Fresh:

Once the burger buns have completely cooled, you’ll store either in a bread container or gently wrap in parchment paper then store in a ziplock bag on the counter for 3-4 days.

  1. Hi! I plan on making this recipe but I think you forgot to add the addition of the butter in your instructions. I know it’s an important thing to add for brioche. I’ll be adding mine in sometime around the flour and sugar.
