Alla Vodka Tortellini Soup (Less than 10 ingredients!)
Ep. 7 of my Cozy Soups & Grilled Cheese Series! ⛷ Today, we’re making an Alla Vodka Tortellini Soup recipes with less than 10 ingredients. It’s a very easy weeknight dinner to cozy up to this winter!

Ingredients you’ll need:
- Cherry Tomatoes
- Shallots, roughly chopped
- Fresh Oregano Leaves
- Garlic, very top cut off to reveal cloves inside
- Olive Oil
- Vegetable Broth, or bone broth
- Botticelli Alla Vodka Pasta Sauce
- cup Freshly Grated Parmesan
- Salt & Black Pepper, to taste
- Red Pepper Flakes, for garnishing
- Heavy Cream, for garnishing

Substitutes for tortellini:
- Any cooked pasta noodles – TIP: Cook the dry pasta noodles separate, then add to the soup. Tortellini pasta does not soak up as much water when cooking like traditional pasta noodles.
Additional (but Optional) Ingredients:
- Baby Spinach
- Italian Sausage, removed from casing and browned
- Shredded Chicken
- Sautéed Kale
- White Beans, drained

What to Serve with Tortellini Soup:
- Caesar Salad
- Garlic Bread
- Baguettes (homemade authentic French baguettes recipe here!)
- Roasted Vegetables
- Caprese Salad
- Arugula Salad
- Dinner Rolls

Alla Vodka Tortellini Soup (Less than 10 ingredients!)
PREP TIME: 10 COOK TIME: 30 TOTAL: 40
INGREDIENTS
Servings: 4
- Tortellini Pasta
- 1 pint Cherry Tomatoes
- 2 large Shallots, roughly chopped
- 2 tbsp. Fresh Oregano Leaves
- 1 head Garlic, very top cut off to reveal cloves inside
- 2 tbsp. Olive Oil
- 3-4 cups Vegetable Broth, or bone broth
- 1/2 cup Botticelli Alla Vodka Pasta Sauce
- 1/3 cup Freshly Grated Parmesan
- Salt & Black Pepper, to taste
- Red Pepper Flakes, for garnishing
- Heavy Cream, for garnishing
INSTRUCTIONS
- Preheat oven to Convectional Roast 400F. Line a rimmed baking pan with parchment paper.
- Toss the cherry tomatoes, chopped shallots, oregano leaves, and garlic head onto the prepared pan.
- Generously drizzle the olive oil over the vegetables. Roast for 20-22 minutes, until tomatoes are bursting and juicy.
- Transfer the vegetables to a high speed blender. Squeeze the roasted garlic cloves out of their skin into the blender. Pulse 2-3 times, until smooth.
- Pour the vegetable puree into a soup pot over medium high heat.
- Add the broth, vodka sauce, and parmesan. Stir together.
- Bring to a boil, then add the tortellini pasta. Cook 3-4 minutes, or until the tortellini floats to the top.
- Season with salt and black pepper to taste.
- Garnish with a swirl of heavy cream and a dash of red pepper flakes. Enjoy warm!
