Brown Butter Oatmeal Chocolate Chunk Cookie Skillet

  • fine sea salt
  • eggs
  • granulated cane sugar
  • light brown sugar
  • vanilla extract
  • cold water
  • milk chocolate

Ingredients

  • Talenti Madagascan Vanilla Gelato for serving
  • 1 cup Unsalted Butter
  • 2 cups All Purpose Flour
  • 1 cup Oatmeal
  • 1 tsp. Cornstarch
  • ¾ tsp. Baking Soda
  • ½ tsp. Fine Sea Salt
  • 2 large Eggs
  • 1 cup Granulated Cane Sugar
  • ½ cup Light Brown Sugar
  • 2 tsp. Vanilla Extract
  • 2 tbsp. Cold Water
  • 6-8 oz. Milk Chocolate chopped

Instructions

  • Preheat oven to 350F. Grease a 9-10” nonstick skillet.
  • In a large saucepan over medium high heat, add the butter. Stir until melted, then reduce heat to Medium to continue stirring until butter has browned, about 3-4 minutes. The butter will have brown specks at the bottom and smell nutty. Remove from heat and pour into a heat-safe bowl to cool in the fridge or freezer for 10-15 minutes.
  • In the bowl of a stand mixer fitted with the paddle attachment, add the cooled browned butter, granulated cane sugar, and light brown sugar. Beat 1 minute.
  • Add the eggs, vanilla, and water. Beat until silky ribbons, about 2-3 minutes.
  • Stir in the baking soda, cornstarch, and salt until well-combined.
  • Fold in the flour and oatmeal.
  • Add the chopped chocolates and mix until incorporated.
  • Transfer the cookie dough to the skillet.
  • Bake for 18-24 minutes, until centers are just set and edges are beginning to turn golden.
  • Let cool on the pan 10 minutes before topping off with Talenti Madagascar Vanilla Gelato to enjoy!

  1. Just finished making the skillet cookie and noticed that corn starch is listed in the ingredients but not in the instructions. I left it out but wondering when I should have added it?

  4. Is it possible to reheat this? If I was to make it earlier in the day and then serve later? Very excited to make this receipe!

    1. Hi Francesca! I would recommend the following:

      1. Preheat oven to 300–325°F
      2. Cover the skillet loosely with foil
      3. Heat for 8–12 minutes (longer if very thick)
      4. Uncover for the last 1–2 minutes if you want the edges crisp again

      Tip: If it seems dry, add a teaspoon of milk or cream to the skillet before covering!
