Ingredients you’ll need:
- chicken thighs
- seasonings: salt, black pepper, ground cumin, garlic powder, onion powder, paprika & brown sugar
- tomato paste
- garlic
- plain greek yogurt
- lavash bread, or flatbread of choice
- red onions
- fresh parsley / mint
- baby arugula
- fries, homemade or storebought
- zucchini and/or tomatoes

How to Make Homemade Lavash Bread:
- 4 cups all purpose flour + more for rolling
- 2 cups whole milk
- 1 tsp. kosher salt
- Mix all ingredients in a bowl until a shaggy dough.
- Turn out the dough on a clean surface to knead until a soft, pliable dough. Cover and let rest 10-30 minutes.
- Divide the dough into 8 pieces. Use a rolling pin to roll out on a very floured surface until as thin as possible, about 1/8″ thick.
- Heat up a large skillet over medium heat for 4-5 minutes, until hot!
- Cook one flatbread at a time for 1-2 minutes on each side, until you see brown spots.
- Keep covered in kitchen cloths until ready to use to prevent them from drying out.

Chicken Shawarma Wraps with Yogurt-Garlic Sauce
Ingredients
For the Marinated Chicken:
- 1 – 1.5 lbs. Chicken Thighs sliced into bite-sized pieces
- 3 tbsp. Tomato Paste
- 1 tbsp. Brown Sugar
- 1 tsp. EACH: Salt, Black Pepper, Paprika, Garlic Powder, Onion Powder, Ground Cumin
- 2 tbsp. Olive Oil
For the Red Onions:
- 1 Red Onion thinly sliced
- 1/4 cup Fresh Parsley chopped
- Freshly Cracked Black Pepper
- Juice of 1/2 Lemon
For the Garlicky Yogurt Sauce:
- 1 cup Plain Greek Yogurt
- Juice of 1 Lemon
- 3 Garlic Cloves grated
- Freshly Cracked Black Pepper
To Serve:
- Lavash Bread or flatbread of choice
- Baby Arugula
- Sautéed Zucchini
- Optional Fresh Tomatoes, chopped
- Shoestring Fries
- Fresh Mint & Parsley chopped
For the Shoestring Fries:
- 3-4 large Russet Potatoes, thinly sliced
- Frying Oil
Instructions
- Prep the fries by tossing them in a large bowl filled with cold water, ice cubes, and about 1 tablespoon salt. Let sit for 30 minutes, then drain and pat dry.
- As you prep the other ingredients, you can begin making the fries by heating up frying oil over medium heat to 400F, or until glistening. Fry in small batches until golden. Remove the fries with a slotted spoon to a paper towel lined plate. Try not to stack them on top of each other.
- Fry each batch a second time until golden brown and crispy. Season with salt to taste.
- Make the garlicky yogurt sauce by combining all ingredients in a bowl. Season with salt and black pepper to taste. Set aside.
- Make the herby onions by tossing all ingredients together. Set aside.
- If sautéing zucchini, sauté over medium high heat in a large skillet with olive oil. Remove and set aside.
- Cut the chicken thighs into bite sized pieces with kitchen scissors. Place in a large bowl with the seasonings and tomato paste. Mix until well combined.
- Add the olive oil to the large skillet over medium high heat to warm for 30 seconds. Add the chicken to sauté for 10-15 minutes, until fully cooked.
- Layer each flatbread with the garlicky yogurt sauce, baby arugula, sautéed zucchini, cooked chicken, red onions, fries, and freshly chopped mint or parsley. Wrap the bottom in parchment paper to catch any sauce drippings. Enjoy warm!

My family loved this! Three boys under 12; all loved it! Hubby too! Thanks for sharing!
This was such an easy and delicious recipe. My family loved it so much!!! Will totally remake it again!!
This was SO good!! Definitely going in my family’s rotation. Super easy to make. I used large Greek pitas because I missed the homemade lavash bread part 🙁 I will do that next time. I also used frozen shoestring fries bc I ran out of time. The flavors combined so well and it was so filling. The whole meal was just incredible!!
One of the best dishes I’ve made in weeks! Thank you!
Yum!
Tastes amazing!
This looks absolutely amazing! Do you know if I could simply replace the all-purpose flour for some gluten-free flour to make the bread gluten-free?
oh absolutely! I know bob’s red mill has a lot of really good AP flour substitutes for gluten free diets!
My husband and I LOVED this recipe! I’ve made other shawarma wraps before, but these were my favorite:) will definitely be making them again!
