Copycat Ben & Jerry’s Phish Food Custard Ice Cream

Craving the rich, chocolatey goodness of Ben & Jerry’s Phish Food ice cream? This easy copycat Phish Food custard ice cream recipe combines creamy homemade chocolate ice cream, gooey marshmallow swirls, and chocolatey bites for a decadent frozen dessert you can make right at home.

What is Phish Food ice cream?

Phish Food is a chocolate ice cream flavor inspired by Ben & Jerry’s, traditionally featuring marshmallow swirl and chocolate pieces. This homemade copycat version recreates those indulgent flavors in a rich custard-style ice cream.

What makes this a custard ice cream?

Custard ice cream is made with egg yolks, which give the ice cream a rich, creamy texture and luxurious mouthfeel. The egg yolks also help create a smooth base that works especially well with chocolate.

Do I need an ice cream maker?

For the creamiest results, an ice cream maker is recommended. If you don’t have one, you can use a no-churn method, although the texture may be slightly different.

How do I keep the marshmallow swirl from disappearing?

Let the ice cream cool and churn completely before adding the marshmallow swirl. Gently layer the swirl into the finished ice cream rather than mixing it in completely to create distinct ribbons throughout.

Can I use store-bought marshmallow creme?

Absolutely. Marshmallow creme is a convenient option for creating the signature gooey marshmallow swirl without making it from scratch.

Can I make this chocolate custard ice cream ahead of time?

Yes! Homemade custard ice cream is perfect for making ahead. Allow it to fully churn and freeze until firm before serving.

Can I add extra chocolate pieces?

Definitely. Fold in additional chocolate chips, chocolate chunks, or chopped chocolate while layering the ice cream for an extra-rich chocolate dessert.

Why is my homemade ice cream hard after freezing?

Homemade ice cream can freeze harder than commercial ice cream because it doesn’t contain the same stabilizers and processing ingredients. Let it sit at room temperature for about 5–10 minutes before scooping.

How should I store homemade Phish Food ice cream?

Store the ice cream in an airtight, freezer-safe container toward the back of the freezer where the temperature stays most consistent. For the best texture, enjoy it within a few weeks.

My favorite containers are these Kraft paper pints from Amazon – linked here! I recommend adding a small square of parchment paper to help it stay even softer when you go to scoop.

Ingredients

For the Chocolate Custard Ice Cream:

  • 4 cups whole milk
  • 4 cup heavy cream
  • 1 cup milk powder
  • 3/4 cup high quality dark or milk chocolate roughly chopped
  • 3/4 cup maple syrup
  • 1/3 cup cocoa powder
  • 7 egg yolks
  • 1 tablespoon vanilla extract

For the Chocolate Fudge:

  • 3 cups high quality dark chocolate
  • 14 oz sweetened condensed milk
  • 1 teaspoon vanilla extract

For the Soft Caramel Bits:

  • 1/2 cup granulated sugar
  • 3 tablespoons unsalted butter
  • 1/4 cup heavy cream
  • 1/2 teaspoon fine sea salt

For the Homemade Marshmallow:

  • 3/4 cup COLD water
  • 2 1/4 teaspoons gelatin powder
  • 3/4 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 1/8 teaspoon fine sea salt

Instructions

To Make the Chocolate Custard Ice Cream:

  • In a large saucepan, combine the whole milk, heavy cream, milk powder, chopped chocolate, maple syrup, and cocoa powder. Whisk all ingredients together, then place over medium high heat to cook until 110F. Immediately remove from heat.
  • Add the egg yolks into a large bowl, then add ¼ cup of the hot milk mixture and immediately whisk. Continue this process two more times to gradually temper the eggs. Whisk the tempered eggs mixture back into the saucepan.
  • Place back over medium heat and stir until 170F to 175F, about 5-10 minutes. It should have slightly thickened up and easily coats the back of a spoon.
  • Remove from heat to stir in the vanilla. Pour into a heat-safe glass container, then let cool at room temperature for 30 to 45 minutes before transferring to the fridge. Store in the fridge until completely cooled, 4 hours to overnight.
  • Add to your ice cream maker and following appliance instructions. I recommend completely this step after both the fudge and soft caramel have been made and semi-frozen for easier layering.

To Make the Chocolate Fudge:

  • Combine the chocolate and sweetened condensed milk in a heavy-bottom saucepan. Place over medium heat and stir until smooth. Add the vanilla and stir until the fudge turns a little shiny.
  • Either pour into a parchment paper-lined baking pan to slice into bite-sized pieces, or spread evenly into a silicone mini fish mold. Place in the freezer to help firm up for 1 hour prior to layering into the ice cream.

To Make the Soft Caramel Bits:

  • (You can use the same saucepan for all components, just clean out and pat dry before next use.)
  • In a heavy bottom saucepan, add the sugar. Place over medium heat and stir until fully melted and the sugar turns an amber color, about 8 to 10 minutes.
  • Reduce heat to LOW. Add the cubed butter and whisk until smooth. Gradually pour in the heavy cream and add a pinch of salt. Once smooth, stop whisking and let bubble for 1 minute.
  • Pour onto a parchment lined baking pan to cool completely, about 30 minutes. Place in the freezer for 30 minutes to 1 hour to firm up and slice with scissors for easier layering.

Begin churning the ice cream (as this will take 30ish minutes). Place in the freezer while you finish prepping components.

    For the Homemade Marshmallows:

    • In a small bowl, combine 1/4 cup COLD water and the gelatin. Whisk until smooth and set aside to bloom for 10 minutes. The mixture should firm up into a blob.
    • In a heavy bottom saucepan, add the remaining 1/2 cup water and sugar. Stir until sugar dissolves, then stir occasionally until temperature reads 240F. Immediately pour into a stand mixer bowl fitted with the whisk attachment.
    • Add the bloomed gelatin into the stand mixer bowl then whisk on LOW speed until frothy. Increase speed to beat for 8 to 10 minutes, until it looks like marshmallow fluff! Be careful not to over mix like you would normally when making marshmallows or the mixture will be too firm to work with.

To Layer the Custard Ice Cream:

    • In your ice cream pint(s), add a small layer of the churned chocolate ice cream, a swirl of marshmallow fluffy, the fudge pieces, and the soft caramel bits. Continue layering until all ice cream is used. Place a small sheet of parchment on top before adding the pint lid. Let firm up in the freezer at least 4 hours before scooping to serve.

I truly hope you all enjoy this treasured recipe that has nestled its way into our hearts here in the ABM kitchen! ’till next time… xxL

Made this recipe for my husband’s birthday and it was delicious! I made it in steps over multiple days and just stored everything in the freezer (except the marshmallow fluff, which I wish I would have made right before churning the ice cream). The only thing that I think I’d change next time is I wish the little chocolate fish had a bit more of a crunchy texture, like a cold chocolate chip, rather than a chewy texture like the caramel. But, despite being intimidated by all of the different components, everything came together relatively quickly and easily. I’ll definitely make this again!

So delicious, a hit for the family! Has encouraged me to make more ice cream and buy less.
I didn’t make or buy marshmallow to reduce time and marshmallow probably not as big in Australia.
My caramel didn’t set as hard as shown in the photos on the recipe (still so good) just hard to work with.
Will definitely be making this recipe again!
I had to take it out of the freezer quite a bit before eating as it got quite hard in the freezer after being in there for a few days.
