(Dairy-Free) Raspberry Peach Swirled Coconut Ice Cream
Cool off with this creamy dairy-free raspberry peach swirled coconut ice cream, made with juicy summer peaches, sweet raspberries, and rich coconut milk for the ultimate frozen treat. This easy homemade vegan ice cream recipe is naturally dairy-free, bursting with fresh fruit flavor, and perfect for hot summer days, backyard gatherings, or a refreshing dessert anytime.

Can I use frozen fruit instead of fresh?
Yes! Frozen peaches and raspberries work well in this recipe. Let the fruit thaw slightly before blending for the smoothest texture.
What is the best coconut milk for dairy-free ice cream?
Use full-fat canned coconut milk for the creamiest texture. Light coconut milk contains more water and may result in an icy consistency.
How do I keep homemade dairy-free ice cream from getting too hard?
Store the ice cream in an airtight container and let it sit at room temperature for 15–20 minutes before scooping. Adding a small amount of alcohol or liquid sweetener can also help keep it softer.

Can I make this vegan ice cream without an ice cream maker?
Yes! Blend the ingredients, freeze the mixture in a shallow container, and stir every 30–45 minutes for the first few hours to reduce ice crystals.
How long does homemade coconut milk ice cream last?
When stored in an airtight freezer-safe container, it will stay fresh for up to 2 weeks, although it’s best enjoyed within the first week for optimal flavor and texture.
Can I use other fruits in this recipe?
Absolutely! Strawberries, blueberries, blackberries, mangoes, or cherries all pair beautifully with coconut milk and can be swirled into the ice cream.

Is this raspberry peach ice cream gluten-free?
Yes, this recipe is naturally gluten-free as long as all packaged ingredients, such as vanilla extract, are certified gluten-free if needed.
Why is my homemade ice cream icy instead of creamy?
An icy texture usually happens when the mixture contains too much water or not enough fat. Using full-fat coconut milk and avoiding excess liquid from the fruit will help create a creamier ice cream.
Can I reduce the sugar in this recipe?
Yes. You can reduce the sweetener slightly, but keep in mind that sugar helps improve the texture and scoopability of homemade ice cream.

(Dairy-Free) Raspberry Peach Swirled Coconut Ice Cream
Ingredients
For the raspberry-peach compote:
- 1 cup fresh or frozen raspberries
- 1 cup ripe peaches chopped
- 3 tablespoons sugar
- 2 tablespoons fresh lemon juice
For the ice cream base:
- 2 cans full fat coconut milk
- 1/3 cup maple syrup
- 2 teaspoons vanilla bean paste
- 4 oz high-quality dark chocolate finely chopped
Instructions
To make the raspberry-peach compote:
- Combine all ingredients in a heavy-bottom, stainless-steel saucepan and stir well. Place over medium high heat and bring to a boil, then cover and reduce to LOW to simmer for 10 to 15 minutes. The compote should be very juicy. Mash with a fork, if there’s still larger peach chunks.
- Remove to a bowl to cool completely before layering into the ice cream.
To make the ice cream base:
- Make sure your ice cream base has been frozen for at least 24 hours prior to churning.
- Remove the tops of each coconut can. We need a total of 2 cups of coconut milk, but you want to first scoop out the white part before adding any clear liquid. Add to a large bowl.
- Add the maple syrup and vanilla bean paste then whisk until very smooth.
- Add to the frozen base and churn until thick, soft serve texture. Add the finely chopped chocolate and churn until well divided.
To assemble the layers:
- Using either a kraft paper cup or glass container, begin to layer in the churned ice cream and raspberry-peach compote.
- Add the lid to place in the freezer for 3 to 4 hours to firm up. If storing longer than 4 hours, you may need it to sit out for 20 to 30 minutes to soften before scooping.
I truly hope you all enjoy this treasured recipe that has nestled its way into our hearts here in the ABM kitchen! ’till next time… xxL
