Greek-inspired Herby Beef Kofta Wrap

Lavash layered with baby arugula, homemade beef kofta recipe made with lots of fresh herbs, pickled onions, tzatziki, and served with crispy seasoned potato wedges!

Ingredients you’ll need:

For the Beef Kofta:

  • Ground Beef
  • Red Onion 
  • Garlic Cloves
  • Fresh Basil
  • Fresh Mint
  • Flour
  • Egg
  • Salt, Black Pepper, Paprika, & Cumin
  • Olive Oil
  • Pistachios

For the Wrap:

  • Lavash Bread or regular wrap of choice
  • Tzatziki
  • Baby Arugula
  • Pickled Onions
  • Alfalfa Sprouts
  • Cherry Tomatoes,

Ingredients

For the Beef Kofta:

  • 1 1/2 lb. Ground Beef
  • 1/2 Red Onion peeled and coarsely chopped
  • 2 Garlic Cloves peeled
  • 1/2 cup Fresh Basil
  • 1/4 cup Fresh Mint
  • 1/3 cup Flour
  • 1 large Egg
  • 1/2 tsp. EACH: Salt, Black Pepper, Paprika, & Cumin
  • 2 tbsp. Olive Oil
  • 2 tbsp. Pistachios

For the Wrap:

  • Lavash Bread or regular wrap of choice
  • Tzatziki
  • Baby Arugula
  • Pickled Onions
  • Alfalfa Sprouts
  • Cherry Tomatoes, chopped

Instructions

  • Preheat oven to 350F. Line a small baking pan with parchment paper.
  • In a food processor, combine the red onion, garlic, basil, and mint. Pulse until really fine texture. Transfer to a large bowl.
  • Add the ground beef, flour, egg, and spices to the bowl. Mix just until well-combined.
  • Form into long, thin patties.
  • Place a skillet over medium heat. Add the olive oil to heat up for 1 minute.
  • Sear the beef koftas for 2-3 minutes on each side, until crisp and browned. Transfer to the prepared pan to finish cooking in the oven for 6-8 minutes, depending on how thick they are. They may not need to be transferred into the oven if they’re thin enough to finish cooking on the stovetop.
  • To assemble the wrap, layer the lavash bread with baby arugula, tzatziki, 2-3 beef koftas, sprouts, pickled onions, and cherry tomatoes. Enjoy!

    The video hooked me with that opening shot!
    We made some amendments like a spicy aioli and naan since we had them in the pantry, but overall we were so impressed with this recipe!
    This was a great wrap and a wonderful way to enjoy greek flavors.
